Raspberry Coconut Ice Cream (Vegan)

I use my ice cream maker at least once a week in the summer.  This Raspberry Coconut Ice Cream is my latest creation.  I just love the combination of raspberry and coconut, don’t you?

This ice cream recipe is vegan, gluten free and paleo approved.  Zero processed sugar too.

One thing I noticed about store bought healthier ice creams is that they all still contain processed sugars, and have too long of an ingredient list for me.  My homemade ice cream recipes are super simple to make and you can control the ingredients and the sugar amount.

 

It’s so worth it to get an ice cream maker if you like ice cream.  The healthier brands in the store are still pretty pricey, so the ice cream maker pays for itself in just a few batches! I have this brand and it’s held up great for 4 years so far.

Raspberry Coconut Ice Cream

Prep Time 5 min Cook Time 20 min Serves 4     adjust servings

The perfect dessert for summer. ZERO refined sugar and dairy free too!

Ingredients

Instructions

  1. Put all the ingredients in a blender and blend until smooth.
  2. Pour contents into an ice cream maker and turn on. It should take about 20 minutes to make ice soft serve cream.
  3. Transfer ice cream to a freezer safe tub for storage. I like these tubs .

This ice cream comes out like soft-serve. For a harder ice cream, simply put the ice cream in the freezer for 1 hour. This should last at least 3 months in the freezer. Enjoy!

  1. looking forward to trying it - Melissa does the coconut milk need to be chilled before it goes in the ice cream maker?
  2. We're mostly fat-free around here -- what about using non-dairy (frozen cubes) and coconut extract (how much?) along with bananas in a Yononas machine instead?
    1. You can do that, but it may be more like a smoothie consistency than ice cream since the ice cream maker adds air to the mixture.
