Double Chocolate Ice Cream (Vegan, Paleo)

Double Chocolate Ice Cream.  Yesterday, I asked my daughter what she wanted to help me make.  She requested chocolate ice cream.

She is a huge chocolate fan, so of course we had to make it extra chocolatey ice cream!  Homemade ice cream is so much better than store bought.  You can control the ingredients.

This ice cream is also packed full of chocolate chips.  A must try for any chocolate lover.  My husband and older daughter are the true chocolate lovers in our family.

My baby girl and I are vanilla fans.  This ice cream recipe is vegan, gluten free and dairy free. I hope you enjoy it.  You can make this in about 20 minutes!  If you don’t have an ice cream maker, you can always pour this into popsicle molds

Prep Time 5 min Cook Time 20 min Serves 4 servings     adjust servings

An easy recipe that your kids will love!

Ingredients

Instructions

  1. Make sure your ice cream bowl has been in the freezer for at least 18 hours.
  2. In a large bowl , or blender mix all ingredients except the chocolate chips. Stir until everything is mixed well.
  3. Pour into the ice cream maker and turn on. It should take about 15-20 minutes to make ice cream. When it looks like it's almost done, add the chocolate chips. Then use a spatula to guide the mixture around so they get evenly dispersed.

The ice cream will be a soft serve consistency. If you like a harder ice cream, stick yours in the fridge for another hour. I like to store my ice cream in this tub . It's the perfect size for my freezer. Enjoy!

  1. I want to try this,but I have no ice cream maker. Can I freeze the milk in ice cube trays without it separating, then blend everything together?
    1. I am not sure. You can blend everything in the Vitamix, pour into ice cube trays, freeze and blend once frozen? That is the only way I think it could work in a Vitamix.

We stopped buying ice cream from the store because the ingredients just weirded me out and I couldn't bring myself to feed it to my kids anymore...   3. This ice cream is so good!! Sadly, my kids didn't like it. I think it's the coconut milk, they can't seem to get past it (I tried the mint choc chip too). :( I stuck a banana in my ice cream and it tasted like a chocolate sundae. Yum!   5. Your timing with this recipe is perfect! I just (finally) ordered full fat coconut milk from Amazon and used it for the first time on Sunday to make vanilla ice cream. I confess that I kind of made up the recipe but with good results. Next up was going to be chocolate but I needed a recipe. Thanks Melissa!
  6. What size are your cans? The coconut milk that I have are only 5.4 oz each, so wondering how many to use.
  7. The ice cream recipes I've tasted are great, but I'm having good trouble with my ice cream maker. The batter freezes to the sides of the tub immediately, and then the motor can't mix. I thought the first time was because I washed the frozen tub then tried to make ice cream. The second time I made sure to let the tub dry completely before putting it in the freezer, but the sides still froze. I will try next time turning the maker on and then adding the batter. Anyone else have the same trouble?
    1. I had that problem once and it turned out I had the paddle in wrong. Are you sure you put it together correctly?
