Peanut Butter Jelly Bars are where it’s at.  Your favorite childhood snack made into one tasty dessert bar.

This recipe came about because I accidentally contaminated a jar of jelly.  My youngest daughter is allergic to tree nuts and I used a spoon that had touched cashew butter in the jam. So I needed to use it up in a recipe.

I made these bars for my husband to take to work for snacks.

These delicious bars are packed with peanut butter flavor.  They also happen to be vegan, gluten free and oil free!  I used raspberry jam, but you can use any jam flavor you like.  You can also use sunflower butter if you need a nut free option.

I used cashew butter as the base because I really love the subtle flavor and buttery texture of it.  If you need to make this nut free, you can certainly use sunflower butter instead. This fudge has a lovely, creamy texture with hints of cinnamon and sweetness from the maple syrup.

Flourless Vanilla Bean Cookies (Vegan)

Flourless Vanilla Bean Cookies.  The other day, I shared a recipe for vanilla bean dip.  It was literally one of my favorite recipe lately.

As I was eating it, I thought it would make an awesome cookie too.  So I made the dip again and baked it.  The result was delicious!

This recipe is vegan, gluten free and grain free.  I think you can definitely add in chocolate chips or white chocolate chips if you like.  That would be good!

I used cashew butter in my recipe, but it would also work with almond butter or sunflower butter for a nut-free option.
