Healthy Flourless Chocolate Muffins

Oh wow!  These healthy flourless chocolate muffins are seriously good!  They are also super easy to make.  All you need is 4 ingredients!

These chocolate muffins are very rich, and would probably be great for cupcakes as well.  These healthy flourless chocolate muffins only take about 20 minutes from start to finish.  No mixer required.  We all need more chocolate muffins in our life right?

I used peanut butter in these chocolate muffins to add a rich texture.  You could also use sunflower butter if you have a peanut allergy.  If you want the rich texture, but not the strong flavor of the peanut butter, you can try using macadamia butter or cashew butter.

Macadamia butter works awesome in my fudgy flourless brownies, so I know it would be good in these as well.  I also often use cashew butter as a base for my flourless cookie recipes.  These healthy chocolate muffins are vegan, gluten free and grain free.  I hope you enjoy them.

Prep Time 5 min Cook Time 15 min Serves 8 muffins     adjust servings

Only 4 ingredients to make this delicious chocolate treat!

  1. Pre-heat oven to 350.
  2. In a food processor combine all ingredients. You may have to stop and scrape down the sides a few times.
  3. Once everything is mixed well, spoon batter into lined muffin cups. I used silicone molds. The batter will be VERY sticky. I found wetting a spoon kept it from sticking.
  4. I topped a few of mine with chocolate chips. Feel free to do the same.
  5. Place muffin pan in the oven and bake for about 15 minutes.
  6. Wait until these are completely cooled before removing from the pan.

Store these muffins in the fridge. They should last at least 5 days. You can also freeze them for longer storage. Enjoy!

    1. I'm diabetic as well, and I used sugar free syrup. They turned out delicious, and didn't spike my sugar. I used about a teaspoon more than was called for, since sugar free is thinner than regular. My husband and 3 year old LOVED them!
  1. So I did the math for how many calories each serving would be... if this truly makes 6 muffins as the pictures show then it would be around 483 calories a muffin. I wouldn't call that healthy by any means....
      1. Calories do not always mean unhealthy. I can think of a lot of unhealthy foods that are low calorie. I think these are perfectly fine for an active person to eat. If you don't like them, you don't have to make them...
    1. I'm not sure why people have to be so negative about things. Don't make them if you don't want to eat them! I think this is a great recipe - no flour, no refined sugar, no dairy... All good things for people with a variety of dietary restrictions. Mine are in the oven right now and I can't wait to try them! Like anything else, consume them in moderation, and the calories shouldn't be a big deal. There's far more to healthy eating than counting calories.

Was strolling through Pinterest tonight and found many good ways to use up my overripe bananas, but this one looks like the best, as from what you say it's almost like a brownie, something I've had a hard time making gluten free, after the first batch will try kind of combining some ingredients from other recipes too, and see what I come up with, since I have quite a few bananas that need to be used very very soon, Will have to check out more of your recipes tomorrow after seeing so many wonderful comments about all your recipes, and signing up for your newsletter so I don't miss any new ones.

  6. i just made these this morning and of course had to try one.. Lol. Were very good! Would be good with nuts in them also. I got 11 muffins from my batch, but only filled them half full. They were alittle chocolatey for me so next time will cut back on the cocoa powder abit. Definetly a keeper!! Thanks Melissa
  7. I see that you mentioned on another comment that you can use stevia instead of the syrup. I was curious if you can also replace it with raw honey? I'm not worried about the calories or anything, just have a lot of that on hand and do not have maple syrup. If so, I am making these tomorrow!

  8. dh saw this and wants to give it a go. any thoughts on MINI muffins? i'm not a baker, and I have never baked flourless, so how long for minis and what do I look for in done-ness?
    1. It's hard to tell when this recipe is done since it has such a fudgey texture. If you were to do mini muffins I say they might be done in 8-10 minutes?
      1. I made these as mini muffins and it made thirty. They cooked for 12 minutes but I had pans edge to edge on both oven racks. I would say 8-10 min if you had them on only one rack. Pay no attention to those who are negative. Unless they understand clean eating, they will not truly understand using things such as pure maple syrup or molasses to sweeten. Thanks for sharing!
