Pumpkin Spice Coffee Cake Muffins.  One of my most favorite muffin recipes on the blog is the healthy chocolate chip pumpkin muffins.  We make them all year long!  So I kind of tweaked that recipe a bit to create these new pumpkin muffins.

These healthy muffins are seriously delicious.  Also vegan and gluten free. You can easily make them nut-free by using a different kind of milk and a different flour for the crumb topping.

Sweet Potato Coffee Cake Muffins

You guys!  I made these delicious Sweet Potato Coffee Cake Muffins.  They taste like a sweet coffee cake, but they come with hidden serving of veggies!  My kids had no idea and ate them up. I promise you will devour them too.  I mean, just look at that crumble topping!  They go perfect with a cup of coffee.

These healthy muffins are vegan and gluten free.  Free of refined sugar, but full of flavor.  I added nice spices like the cinnamon, nutmeg and ginger that will leave your kitchen smelling like Fall.

I made my muffins jumbo sized, but you can make regular muffins as well.  However, the cooking time in the recipe will be for jumbo.  You need to cut down the cooking time for standard sized muffins.

Raspberry Banana Muffins

I had some ripe bananas to use up the other day, so I made these Raspberry Banana Muffins.  These healthy muffins are gluten free, vegan and oil free.  You only need a few simple ingredients to make them.

I added shredded coconut into these muffins because I think raspberry and coconut just go fabulous together. Don’t you think?

Oat Bran Muffins (Vegan, Gluten Free)

I have some Oat Bran Muffins for you to try!  I have been making bran muffins for years.  However, the recipe I use is not gluten free.  It calls for spelt flour.

So this week, I tweaked it a bit to make it gluten free.  The result was delicious and my 6 year old LOVED them.  I hope you love them too.

Not only is this recipe vegan and gluten free, but it can easily be made nut free if you just swap out the almond milk for another nut free milk.
