I have another new holiday cookie recipe for you! This time it’s flourless chocolate peppermint cookies. These flourless chocolate peppermint cookies are super easy to make. These chocolate peppermint cookies has a buttery taste/texture without any oil or butter! I added some dark chocolate chips to mine for an extra punch of chocolate goodness. These flourless peppermint cookies are vegan, gluten free and paleo. I hope you enjoy them as much as we did. This recipe makes a small batch, so if you are feeding a lot of people, you may want to double it! If you need more holiday cookie ideas, you may also like this post. I used homemade cashew butter for this recipe, but you can also use store bought. It’s super easy to make yourself. Just put cashews in a food processor and mix into butter.

Flourless Chocolate Peppermint Cookies
All you need is 4 ingredients and less than 15 minutes to make these healthy cookies with ZERO processed sugar!
Ingredients
- 1 cup cashew butter
- 1/4 cup cacao powder
- 3 T maple syrup
- 1/2-3/4 tsp peppermint extract
- optional: dark chocolate chips
Instructions
- Preheat oven to 350.
- In a food processor , combine all the ingredients and blend well.
- If you choose to add chocolate chips, add them at the end and pulse a few times so they get mixed in well.
- Using a cookie scoop , drop cookies onto a lined baking sheet .
- Bake for 10 minutes.
- Let the cookies completely cool before removing from the baking sheet.
- Store in an airtight container in the fridge. They should last a couple weeks that way. You can also freeze them for longer storage. Enjoy!
