Chocolate Peppermint Cookies

I have another new holiday cookie recipe for you!  This time it’s flourless chocolate peppermint cookies.  These flourless chocolate peppermint cookies are super easy to make.  All you need is 4 ingredients and less than 15 minutes!  If you like these, you may also enjoy my 4 ingredient peppermint fudge.

These chocolate peppermint cookies has a buttery taste/texture without any oil or butter!  I added some dark chocolate chips to mine for an extra punch of chocolate goodness.  These flourless peppermint cookies are vegan, gluten free and paleo.  I hope you enjoy them as much as we did.  This recipe makes a small batch, so if you are feeding a lot of people, you may want to double it!  If you need more holiday cookie ideas, you may also like this post.  I used homemade cashew butter for this recipe, but you can also use store bought. It’s super easy to make yourself.  Just put cashews in a food processor and mix into butter.

All you need is 4 ingredients and less than 15 minutes to make these healthy cookies with ZERO processed sugar!

  1. Preheat oven to 350.
  2. In a food processor , combine all the ingredients and blend well.
  3. If you choose to add chocolate chips, add them at the end and pulse a few times so they get mixed in well.
  4. Using a cookie scoop , drop cookies onto a lined baking sheet .
  5. Bake for 10 minutes.
  6. Let the cookies completely cool before removing from the baking sheet.
  7. Store in an airtight container in the fridge. They should last a couple weeks that way. You can also freeze them for longer storage. Enjoy!

  1. Hello Melissa! These sound great! I haven't made any of these cookies with cashew butter as the base but I'm looking forward to it tonight. I have a quick question about making homemade cashew butter. Do you typically use RAW cashews for this? Thanks! :)
  2. I may try these when the holidays return...However, I know somebody who is allergic to the cacao powder and other forms of chocolate. Is white chocolate technically chocolate? If it isn't, I'm going to consider the white chocolate, for their sake. By the way, has anyone tried this recipe with white chocolate? Let me know if you liked it or not. Thanks, guys!
  3. I made these with raw cashews instead of the more expensive cashew butter. Had to use a little cashew milk to help the cashews grind up, but the final result worked great. This really puts a blendtec or Vitamix to the test. Neither is very good at making nut butters. But it can be done. BTW: Xylitol is also perfectly usable, but you need to dissolve it first in Cashew milk. Don't be afraid to experiment!
