Cheesy Vegan Quinoa Bites

You guys!!  My husband made the most amazing Cheesy Vegan Quinoa Bites!  There are tons of quinoa bite recipes on the web, but almost ALL of them contain cheese.  So he set out to make some Cheesy Vegan Quinoa Bites.  He totally outdid himself with this one!!  This is definitely a recipe we will make often in our house! He is just so much better at the savory dishes than I am.  A few of his other recipes are very popular on the blog.  Like the Sweet Potato Chili and the Pumpkin Enchiladas.

He made these in jumbo sized muffin pans.  However, I HIGHLY suggest making them in standard sized muffin pans.  I will mention the cooking time for both versions in the recipe.  These are just perfect. They are crispy on the outside and a little gooey in the middle.  These cheesy vegan quinoa bites are also gluten free in addition to being vegan. 🙂

  1. What could you use in place of the vegan cheese sauce? I don't mind if it's cheese, we are not vegan. Thanks! I am not good at comparing/substituting.
  2. So this is my first time making anything with cashews, love the sauce, the cups are in the oven. Hoping my kids devour these like they do all your other recipes. Thank you for sharing your recipes!
  3. My daughter is allergic to eggs, dairy, wheat, oats, peanuts, chicken, and turkey (currently in the process of treating her for them but that will definitely take some time!) and I am so excited to try a bunch of your recipes, especially this one!

  4. Hi Melissa, I have these in the oven right now and have some cashew sauce left over. What do you do with yours? I was wondering if I could freeze it.
  5. Your recipes are amazing and life-savers for my son who is allergic to dairy, eggs, walnuts, hazelnuts, cashews....and perhaps more tree nuts. Is there a substitute for the cashews? Thank you.
    1. Thank you!! Can he have eggplant? Maybe you can use this recipe for the "cheese" http://minimalistbaker.com/cashew-less-vegan-queso/
      1. I have made that minimalist baker eggplant queso, and while it makes a tasty dip, in no way does it resemble cheese sauce and looks nothing like the photos in the recipes.
  6. I am looking forward to trying these for dinner tonight. We love cashew cheese and quinoa so I am positive they will be a winner! What do you make for a main dish to go with these? I am having a hard time thinking of something.
    1. Since quinoa is a complete protein, I ate this as a main dish with a side of roasted veggies. I hope you enjoy them!
  7. I'm going to make these tonight, but do you think it would work to just scoop it all in a casserole dish and bake it?
  8. I'm making these tomorrow night for dinner and I was wondering how many it makes? Debating whether I should double the recipe or not.
  9. So I thought these were good warm with some hot sauce and roasted veggies. Then I had them at room temperature with ketchup...omg I feel like a gleeful child.
