Homemade Kale Chips

I made you some Homemade Kale Chips! When I started to research healthy foods,over and over I read about the benefits of kale.

Kale packs more iron than beef, it’s loaded with antioxidants and vitamins K, C and A.  Kale is available most of the year, although, it’s most in season during the fall months.

I had never tried it so I bought some on day.  I first tried it raw and I admit I was not a fan.  That is, until I discovered kale chips!  Kale chips are so addicting.

This recipe is so versatile too.  You can just add any flavors you like.  I try to keep mine simple with just some olive oil, white balsamic and sea salt.  They come out mildly sweet and crunchy.

Homemade Kale Chips

Kale Chips

Prep Time 5 min Cook Time 10 min

Ingredients

  • Kale rinsed and dried (I buy organic because kale tends to hold a lot of pesticide residue.)
  • 1 T olive oil
  • 2 T white balsamic vinegar
  • 1/4 tsp sea salt

Instructions

  1. Preheat oven to 350. 
  2. Remove kale from the stems and tear into bite size pieces. 
  3. Save the stems for juicing
  4. Lay them on a lined or greased baking sheet
  5. In a small bowl, mix oil, vinegar and salt. 
  6. With a silicone brush , gently brush mixture onto the kale pieces. 
  7. Bake in the oven for about 10 minutes or until pieces become crispy.

  1. Hey :) I make them all the time but I can not figure out how to keep them crisp till the next day! I have sealed them in containers and tried zip locks with no luck :( I was thinking a food dehydrator next! Any thoughts?
    1. A food dehydrator will help for sure. I just bought one myself and have not tried kale chips in it yet. When I make a batch there are usually no leftovers. lol. I can't stop eating them!
  2. Oh man... I WISH I liked kale chips since they are super healthy for you! My mom made some pretty much just like this back in November and I just thought they were extremely bitter tasting. Neither husband nor I ate more than one. But my parents love them!
        1. Good idea! Never thought to do that. I have sprinkled nutritional yeast on them and they are good that way too.
  3. I made these last night and they turned out great! My hubby is going to love them. I do have a question though. In the picture your kale is very "flat" while the only organic kale I could find at the store has really "curly" edges. Are there different types of kale?
    1. There are different types of kale. My favorite is Russian red kale, only available certain seasons but it's flatter, more tender, and a little sweeter than the curly type.
  4. I personally love kale chips! I spray them with my Misto olive oil sprayer and sprinkle with salt. I will have to try the white balsamic vinegar. Thanks for the tip!

  6. I have a batch in the oven right now. I used the dark balsamic vinegar as that is what I had on hand. How will that affect the taste?

  8. My 2 year old polished off the entire half bunch of kale I made with your recipe. That is a lot of kale and good nutrients as a healthy snack! I didn't have white balsamic so added a touch of honey but will try it with white balsamic next time!
  9. just used half a bunch of kale and was going to save the other half for something else. That didn't happen! The first batch lasted around 10 seconds - used the rest straight away and there are more in the oven now! What a great recipe!
  10. How could I make this spicy?? I love spicy!! I had kale chips fom health store, they were called nasty hot. They were so good, but expensive!!!
      1. They turned out great. My husband & I (and the entire family next door) loved them. My kids hated them, but to be fair they had their minds made up before they even tried them and they hate pretty much everything that's remotely healthy. I've made them twice now. The second time I put the oil, vinegar, and salt in a mist spray bottle and it worked much better than using a silicone brush. Just so you know, even though my kids didn't like the kale chips I've decided you still get to be my personal hero. I've made out fifteen (not exaggerating) of your recipes in the five days since I discovered your blog and I've loved them all!

  11. I've noticed both with the Cauliflower popcorn and kale chips you use a brush to coat the veggies. What is the benefit of using a brush instead of mixing it all together in a bowl? The bowl method more completely coats the veggies. Is the idea to get less of a coat? Why do you choose to use a brush instead of mixing in a bowl?
