Cake Batter Truffles

Yes!  I have some Cake Batter Truffles for you!  A little while back, I made some cake batter coconut butter.  It was seriously amazing!  If you haven’t tried it yet, I highly recommend you do.  Then you can use some of it for this truffle recipe.  Who doesn’t like cake batter right?  Especially when it is covered in chocolate.  Chocolate makes everything better!  These cake batter truffles did not last long in our house!

These truffles are super easy to make.  They are vegan, gluten free and paleo.  If you don’t want to make your own cake batter coconut butter, you can get a store bought version as well.  The store bought version is double the price of my homemade cake batter coconut butter.  If you like flavored coconut butter, you may also like this recipe.  I used chocolate chips to make the chocolate coating, but you can also use my 3 ingredient chocolate recipe.  If you choose to use the 3 ingredient chocolate, then you can omit the almond milk. Cake Batter Coconut Butter (Vegan)

Cake batter coconut butter you ask?  Yes there is such a thing.  There is actually a brand that sells this very flavor at health food stores.  While their version is delicious, it goes for $12 a jar!  That seems a little pricey to me.

So I thought I would make my own version of cake batter coconut butter.  You can use this delicious coconut butter in place of nut butters, spread it on toast, mix some in overnight oats, or just eat it with a spoon.

I had a couple a lot of spoonfuls while I was making it.  I think I may also have a few plans for this cake batter coconut butter in future dessert recipes.

This homemade coconut butter will harden once it is stored in the fridge.  All you need to do is stick the jar in a bowl of warm water and it softens right up.

If you can’t find macadamia nuts near you, I think cashews would work as well.  However, I think the buttery texture and flavor of the macadamia nuts adds to the cake batter flavor.

Coconut butter is so creamy and delicious and it literally melts in your mouth.  I use coconut butter in a lot of my fudge recipes for that very reason.

Coconut “Nutella” Cups

These things are amazing!  If you like my Homemade Nutella and my Coconut Almond Fudge, you will love these Coconut Nutella Cups!

Let me be the first to say that these should be saved for a time when you want to indulge.  However, they are so rich in taste, that you can’t eat more than a couple bites.  Just store them in your fridge or freezer for when you want to treat yourself with a dessert. 🙂

Coconut “Nutella” Cups

Serves 9     adjust servings

Ingredients

Instructions

  1. In a saucepan , on medium heat, combine all ingredients except the Nutella and stir well.
  2. Remove from heat.
  3. Line muffin pans with liners. I used standard sized muffin pans and lined them with silicone liners . Paper liners would work well too.
  4. Spoon a small amount of coconut mixture into each cup. Spoon a bit of homemade Nutella on top.
  5. Cover the Nutella with more coconut mixture.
  6. Repeat these steps until all are done.
  7. Place the muffin pans in the fridge to allow the cups to firm up.
  8. I let mine sit about 30-45 minutes.
