This Lemon Coconut Mousse is perfect for spring or summer. It can be made in about 5 minutes with only 4 simple ingredients. It’s vegan, gluten free and paleo approved too!
This creamy mousse is silky smooth and packed with lemony flavors thanks to the lemon juice and lemon zest. Marcus took one bite and wanted to eat the whole bowl! I have to admit, I kinda wanted to as well!
Do you love snickerdoodles? Or caramel? I have combined both those delicious flavors to create this Snickerdoodle Caramel Ice Cream.
This snickerdoodleice cream is bursting with flavor from the cinnamon and maple syrup + it has a scrumptious caramel throughout.
Have you ever checked the ingredient list on store bought ice cream? Seems to me there are a lot of unnecessary ingredients in it.
Store bought ice cream is also usually really expensive. This homemade ice cream recipe is super easy to make yourself.
I used full fat canned coconut milk to make this ice cream recipe. It’s very important to use the full fat coconut milk to get that rich flavor that traditional ice cream has.
You can use almond or cashew milk, but keep in mind that the end product will be slightly icy in texture. If you are okay with that, feel free to use any milk you like.
This Mixed Berry Parfait is out of this world. I have been wanting to do a parfait for a while now. Who doesn’t like a parfait?
Creamy and delicious with juicy berries in every bite. Since we are in the midst of spring, I felt a mixed berry parfait was in order.
Omg you guys! This berry parfait was out of this world good. If you like desserts with berries, you may also like my strawberry creme truffles or my strawberry tart.
Food photography can be tough sometimes. Here I thought I was putting everything in so carefully, but it still didn’t come out with the beautiful layers. Live and learn I guess.
I promise you that this mixed berry parfait is delicious! I made the nuts ahead of time. If you don’t like pecans, you can probably use another nut in it’s place.
The vanilla bean cream is to die for! I felt that it really didn’t need any sweetener. The vanilla beans give it a hint of sweetness. Also, if you are not a fan of coconut milk, you can probably use heavy whipping cream in place of it.
Here is a quick video on how to make the coconut whip cream. For more videos, you can subscribe to my You Tube Channel.
If you look at coconut milk in the store, you will notice that pretty much every brand contains carrageenan. Even the organic brands. So the only other option is to make it yourself. The good news is that homemade coconut milk is so easy to do. It only takes a few minutes. The best part about homemade coconut milk is that you can flavor it however you like. I like to add a couple dates for sweetness, but you can also add in some chocolate for a sweeter treat. 🙂 This homemade coconut milk would be great in my coconut vanilla chia pudding or my raspberry coconut smoothie.
Hooray! Warm weather is here. At least, in Texas it is. So it’s time to start breaking out the ice cream maker. I already have a Cookie Dough Ice Cream and a 5 Minute Banana Ice Cream on the blog. Now it’s time to add another: Strawberry Ice Cream. Who doesn’t like strawberry ice cream? I know I love all things ice cream, especially strawberry ice cream.
I use canned coconut milk as a base for all my ice cream recipes for a few reasons. It has that rich taste and mouth feel of real ice cream and it is dairy free. I have tried using just nut milk, but it never comes out as creamy. Since this is so rich tasting, a little bit will satisfy you. You can use either fresh or frozen strawberries for this. We used fresh organic strawberries since they were on sale the other day at Whole Foods. They were so sweet and yummy! Most store bought ice creams contain carrageenan and other unwanted additives. The organic stuff is always so expensive. The ice cream maker is pretty affordable and you make your money back pretty quick. Plus, you can create your own flavors! 🙂
Mix the coconut milk, vanilla bean and the sweetener in a bowl.
Pour the contents in the ice cream maker. I used my Cuisinart.
When the ice cream starts looking like it is coming together (after about 15 minutes), add the strawberries.
The ice cream will be more of a soft serve consistency. If you like harder ice cream, you can stick it in the freezer for another 1 1/2 hours. That’s it. Enjoy!
