New overnight oats recipe for you guys today.  This time it’s Toasted Coconut Overnight Oats.  If you haven’t tried overnight oats before, I suggest you try.  They are seriously life changing. You can make up a week’s worth at a time for easy and healthy breakfasts all week.  Since they come in a jar, they are easy for you to take to work as well. I love the combination of the toasted coconut and the almonds.

I used steel cut oats in my recipe because I like the crunch that retains. If you like a smoother oatmeal, you can use rolled oats.  These can be eaten hot or cold.  Whichever you prefer. I like mine cold because they remind me of cereal.

I love homemade ice cream.  There are so many possibilities.  Today I made some Coconut Chai Ice Cream.  I love that I can control the ingredients.

These did not last long in our house!  I suggest doubling the batch and freezing some.  If you have a nut allergy, you can probably use sunflower seeds in place of the cashews.  That would make them lunchbox friendly too. 🙂

Coconut Berry Fudge Cups (Vegan)

You guys!  These Coconut Berry Fudge Cups are so good!!  If you like my coconut almond fudge, or my lemon coconut fudge, then you will also love the coconut berry fudge cups.  They best part?  They are super easy and only take 4 ingredients!

Only 2 tablespoons of added sugar in the entire batch.  I made mine in standard sized muffins pans, but you can also do these in mini muffin pans for a bite sized treat.
