I am a big fan of almond extract.  This recipe for Almond Coconut Cookies is my latest way to enjoy the flavor of almond extract.  I could honestly smell it all day.  It reminds me of the German desserts my mom used to make when I was a kid.  These Almond Coconut Cookies contain NO flour and No oil.  Just a few simple ingredients!  If you like almond extract as well, you may also like my coconut almond fudge.

I made you some 4 Ingredient Macaroons!  I keep seeing all these macaroon-like raw snack showing up at the health food stores.

Pumpkin Coconut Butter (Vegan)

Pumpkin Coconut Butter is awesome!! Have you tried coconut butter?

It’s so amazing.  It’s melt in your mouth delicious.  I use coconut butter in a lot of my raw desserts.   So I decided to create a Fall inspired coconut butter recipe.

That is how this pumpkin coconut butter came to be.  It would make a great spread for toast, you could swirl it in overnight oats or even melt is and drizzle on pancakes or ice cream.  Yum!

Chocolate Coconut Banana Bread (Vegan)

Chocolate Coconut Banana Bread.  Who doesn’t like a nice slice of homemade banana bread?  Just the smell of it baking makes my mouth water.  I have several healthy banana bread recipes on my blog already, but I had never combined banana, chocolate and coconut together.

I finally combined those flavors making this chocolate banana bread.  This healthy chocolate coconut  banana bread is oil free and has very little added maple syrup.

I use 3 VERY ripe bananas which helped add a natural sweetness to this.  Needless to say, ours was gone in just 2 days!

Using the extra rip bananas helped keep this bread nice and moist without the addition of oil.  This super easy banana bread recipe is vegan and gluten free.

You could even make a double batch and freeze some.  It freezes very well.  I hope you enjoy it.

Cake Batter Coconut Butter (Vegan)

Cake batter coconut butter you ask?  Yes there is such a thing.  There is actually a brand that sells this very flavor at health food stores.  While their version is delicious, it goes for $12 a jar!  That seems a little pricey to me.

So I thought I would make my own version of cake batter coconut butter.  You can use this delicious coconut butter in place of nut butters, spread it on toast, mix some in overnight oats, or just eat it with a spoon.

I had a couple a lot of spoonfuls while I was making it.  I think I may also have a few plans for this cake batter coconut butter in future dessert recipes.

This homemade coconut butter will harden once it is stored in the fridge.  All you need to do is stick the jar in a bowl of warm water and it softens right up.

If you can’t find macadamia nuts near you, I think cashews would work as well.  However, I think the buttery texture and flavor of the macadamia nuts adds to the cake batter flavor.

No Bake German Chocolate Bites

I am super excited to share these no bake German chocolate bites with you.  Now that we are in the middle of summer, no one wants to heat up the entire kitchen with the oven on.  That is why these no bake German chocolate Bites are so great.  I just love no bake treats, don’t you?

I also made these with NO added sugar!  My husband took one bite and said they taste just like German chocolate cake!  Win!

When you think of a typical German chocolate cake recipe, it is very involved and intimidating.  Not these!  You can make them up in a matter of minutes without a mixer!  These no bake German chocolate bites are vegan, gluten free, paleo and nut free.  They are only sweetened with dates!

For the chocolate coating, I used my 3 ingredient chocolate bar recipe.  I just left out the maple syrup.  If you tend to like things a little sweeter, you can add 1 tablespoon maple syrup to the chocolate.
