Cranberry Coconut Granola

I have probably mentioned on more than one occasion how much I love homemade granola. Maybe you got the idea after I posted All Things Granola. Not only is homemade granola a great way to start your day, but it makes a great little snack in the afternoon when you are craving something sweet.  This is my latest homemade granola recipe.  If you like cranberries and coconut, you will love this homemade granola.

This recipe doesn’t make much more than 2-3 servings so if you want, feel free to double the batch.  Granola would also taste great on top of my Chia Seed Pudding.

Ingredients

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in one bowl . Mix wet in another. Add wet to dry and mix until everything is coated. 
  3. Spread mixture onto a lined baking sheet .
  4. Bake in the oven for about 30 minutes. Shake pan about halfway through. If the granola is not crunchy enough, feel free to cook a bit longer.

Cranberry Filled Gingerbread Muffins

The holidays are here and I cannot seem to get enough gingerbread flavored goodies!  This recipe is a great use of leftover Thanksgiving cranberry sauce.  I had mine in the freezer and pulled it out to make these gems.  For the cranberry sauce recipe, click here.

Jelly filled Muffins FG

These would be a perfect Christmas morning breakfast to nibble on as you opened your gifts.  It will also make your house smell amazing!  When they first came out of the oven, my husband, Marcus, inhaled two of them so I knew they had to be good.  These muffins are made with whole grains so they are much healthier than traditional muffins.  This recipe is similar to my healthy gingerbread donuts.  For that recipe click here.

Cranberry Filled Gingerbread Muffins

Preheat oven to 350.  Mix all the dry ingredients in one bowl.  Mix wet into another.  Add dry to wet.  Spoon a small amount of batter into each lined muffin cup.  Add a dollop of cranberry on top of each one.  Fill muffin cups until they are about 3/4 full.  Bake in the oven for 15-17 minutes or until a toothpick comes out clean.  Wait until they have cooled a bit before removing from the muffin pan.  Enjoy!

Cranberry Coconut Donuts (Vegan)

Cranberry Coconut Donuts that are vegan.  Once again here is another donut recipe.  This time it’s healthy cranberry donuts.   They are just so darn easy to make.

I think out of all the donuts I have made so far, these cranberry coconut donuts are my daughter’s favorite.  She puts cranberries in everything.

In our house, cranberries have become a bit of a bribing tool.  “Meadow, eat your tomatoes.” She replies, “No.” “I will give you a cranberry if you do.”

It works too!  All the moms reading this will totally understand.  🙂  So I knew these would be a hit for her.

  1. Preheat oven to 350.
  2. In a medium bowl combine the flour, coconut, salt and baking powder.
  3. In a large bowl, combine the sugar, oil, applesauce and vanilla.
  4. After that, add in the egg, milk and orange zest.
  5. Then fold in the cranberries.
  6. Spoon onto greased donut pans and bake for 10-12 minutes. Enjoy!

Cranberry Surprise Muffins

The other day I made my own cranberry sauce.

The batch was a test and not for Thanksgiving yet.  Since it came out so well, I thought I would try to incorporate the leftovers into some delicious baked goods.  The first thing I made was my cranberry thumbprint cookies.

I came up with this muffin recipe because my daughter Meadow always talks about surprises inside the yogurt I make for her.  I just take whole milk yogurt and put a little fruit in the middle.  She gets a huge kick out of that.  It’s almost like finding a hidden treasure.  The sweet thinking of a three year old’s mind. 🙂

Cranberry Surprise Muffins

Prep Time 10 min Cook Time 20 min

Ingredients

  • 1 1/2 cups white whole wheat flour
  • 1/3 cup maple syrup
  • 3/4 cup milk (I used almond milk)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup applesauce
  • cranberry sauce or your favorite fruit spread

Instructions

  1. Preheat oven to 350. 
  2. Mix all dry ingredients in one bowl.
  3. Mix wet into another. 
  4. Add wet to dry. 
  5. Spoon a bit of the mixture to fill the bottom of the muffin cup. 
  6. Add a small spoonful of cranberry sauce. 
  7. Fill the rest of the muffin cup until it is about 3/4 full. 
  8. Repeat steps for the rest of the muffin cups.
  9. Bake in the oven from anywhere between 15-25 minutes depending on the muffin size you use.  Let them cool completely before removing.  Enjoy!

I used jumbo cups and only got three muffins. I would suggest using regular sized muffin cups.

Cranberry Thumbprint Cookies

Yesterday I made some homemade healthy cranberry sauce.

Since it is not quite Thanksgiving, I had to find a way to use up the sauce I made.  So a cookie came to mind and Cranberry Thumbprint Cookies were born!

These are yummy and they are also a fun cookie to make with your kids.  I have made another version of these in the past and my daughter Meadow loved making the thumbprint in each cookie.  She loves eating them too as you can see in this next picture.

My other daughter Olive is to young for nuts, so she had applesauce.

Cranberry Thumbprint Cookies

1 cup rolled oats
1 cup almonds
1 cup spelt flour
1/3 cup maple syrup
1/4 cup coconut oil (measure after melting)
1/4 cup applesauce
2 T milk (I used almond milk)
Any fruit jam you like (I used homemade cranberry sauce)

Preheat oven to 350.  In a food processor, combine the oats and almonds and pulse into a powder. In a large bowl, combine the almond/oat mixture and flour.  In a small bowl combine the applesauce, maple syrup, oil and milk.  Mix wet into dry.  Roll dough into small balls and then flatten the balls with your hand.  Using your thumb, make a thumbprint into each cookie.  Spoon jam into each print.  Bake in the oven for 12-15 minutes.



Healthy Cranberry Sauce (No Refined Sugar)

Healthy Cranberry Sauce.  Usually when I think of cranberry sauce, I think of the high sugar, gelatinous brand that comes in the can.

This homemade cranberry sauce is as far from that as it can get.  This  healthy cranberry sauce recipe contains no refined sugars.  I love the tarty and tangy taste and I hope you will too.

 

Healthy Cranberry Sauce

This cranberry sauce recipe contains no processed sugars.  It’s also vegan and gluten free.  Another great thing about this recipe is that it can be frozen.

So you could make a large batch in the winter when cranberries are in season.  Then if you get a craving for some cranberry sauce in the summer, you can have it!   I hope you enjoy.

I used this homemade cranberry sauce as a filling in this muffin recipe too.  So delicious!  You can also use the leftovers to use in thumbprint cookies.

Ingredients

  • 1 package cranberries
  • 1 cup diced pineapple
  • 1 T pineapple juice
  • 1 cup orange juice
  • 1 – 2 tsp orange zest
  • 1 T maple syrup

Instructions

  1. In a magic bullet , blend the pineapple and 1 T pineapple juice until it becomes pureed. 
  2. In a medium saucepan, heat the orange juice, pureed pineapple mixture, orange zest and maple syrup. 
  3. Add the cranberries after a few minutes.
  4. Cook until the cranberries pop and breakdown. (about 10 minutes)
  5. Remove from heat and transfer to a bowl.  The mixture will thicken while it stands.  Serve immediately or refrigerate.  Enjoy!
