Gluten Free Sugar Cookies (vegan)

Bring on the holiday baking!  I am starting with these Gluten Free Sugar Cookies.   These gluten free sugar cookies are perfect for cookie swaps and parties.

They contain far less sugar than traditional cookie recipes.  I think my 5 Minute Healthy Frosting would be great on these!  This healthier sugar cookie recipe is also vegan in addition to being gluten free.  All you need is 9 ingredients!

I used palm shortening in this recipe and here is why.  One of the key ingredients in sugar cookies is butter.  I don’t want to use margarine or some other kind of vegan butter.  I also didn’t think coconut oil would have worked in this recipe.  So I used the palm shortening.

I used Nutiva palm shortening which comes from a sustainable source.   Since it’s not something I use on a regular basis, I was okay with it in this recipe.  One thing I did different than most sugar cookie recipes is that I cut the sugar amount in half.

3 Ingredient Oatmeal Cookies (Vegan)

I have another 3 ingredient recipe for you!  This time it’s 3 Ingredient Oatmeal Cookies.  These 3 Ingredient Oatmeal cookies are also nut free, so they are perfect for school lunchboxes.  There is also no added sugar in these oatmeal cookies.

I also added a few chocolate chips to my oatmeal cookies, but that is totally optional.  I think these oatmeal cookies would be great without the chips too.   You can make these healthy oatmeal cookies in just a few minutes!

Pumpkin Raspberry Oat Bars (Vegan)

Pumpkin Raspberry Oat Bars.  Wow these are so good!  The other day, I came across this recipe in the Facebook recipe group I run.

The original recipe has much more oil than I typically use.  It’s also not gluten free.  So I made my Pumpkin Raspberry Oat Bars gluten free with 1/4 of the oil.

I also changed a few other things.  The recipe came out fabulous!  You can custom create your own flavors by changing up the jam.

I used some raspberry chia jam for my filling, but any jam would do well.

Once again this is a recipe I used sorghum flour in.  I like it’s cakey texture and I thought oat flour with rolled oats might be too much oat flavor.

Feel free to use gluten free oat flour if you like.  I am sure it will work great too.   These bars are gluten free and vegan.

If you are not a fan of pumpkin, you could probably use sweet potato or butternut squash puree as well.  Applesauce may be another option for you.

Healthier Pineapple Upside Down Cake

Healthier Pineapple Upside Down Cake.  This pineapple upside down cake is made healthier with whole grain flour and no refined sugars. It’s also vegan and gluten free.

This healthy pineapple upside down cake is super easy to make too!  I was amazed at how rich and buttery it tasted.

The pineapples caramelize during the cooking process so they are super sweet and juicy.  I used coconut butter instead of butter and it came out great. I don’t think you could taste the coconut at all.

Just caramelized pineapple deliciousness! I have also used coconut butter in my lemon blueberry cookies.

I used sorghum flour in my pineapple upside down cake because I like the cake-like texture it produces.  It’s great in my pumpkin chocolate chunk cookies.

I am sure you can probably use gluten free oat flour as well.  This takes no time at all to make and your kitchen will smell amazing!

I know traditional pineapple upside down cake calls for maraschino cherries, but I didn’t want to use those since they are not healthy at all.

I garnished mine with dried cherries after it was cooked.  You might also be able to use frozen, thawed cherries.  Or you can just leave it plain.

Squash Cranberry Muffins

Squash Cranberry Muffins are perfect for Fall.  My kids loved them!  The other day I roasted a kabocha squash.   I was going to use it in my Quinoa and Brussel Sprouts dish, but I ended up roasting it too long and it turned to mush.  So I pureed it and decided to use it in these Squash Cranberry Muffins.  My picky kids loved them!  They are super easy to make.  Vegan and gluten free.  I used part sorghum flour for these since I was out of oat flour.  Feel free to use gluten free oat flour as well.  If you enjoy this recipe, you may also enjoy my gluten free butternut squash bread or my pumpkin chocolate chip muffins.

I am still trying to use up all the food in my fridge and that is why I added cranberries and also chocolate chips.  You can really add in anything you like.  I know it’s hard to find cranberries that are not sweetened with sugar.  Well I found some at Natural Grocers that were apple sweetened.  I believe Eden Foods also sweetens their cranberries with fruit.

Apple Cinnamon Quinoa Bake

Quinoa is not just for savory dishes.  It can be used in many sweet recipes such as this Apple Cinnamon Quinoa Bake.  Even those this Apple Cinnamon Quinoa Bake closely resembles muffins, I decided they were a little too soft to call them muffins.

These almost remind me of my baked oatmeal recipes.  This is the kind of breakfast you eat with a fork more than your hand.  If you like baked oatmeal, but do not tolerate oats well, this is the perfect alternative.

Not only is this Apple Cinnamon Quinoa Bake tasty, it also has no added sugars!  I sweetened mine with dates, apples and applesauce.

This healthy breakfast quinoa bake is vegan and gluten free.  I made mine into jumbo sized muffins, but you can probably bake the whole thing in a pan as well.

You may have to adjust the cooking time though.  This would make a great weekend breakfast.  Your house will smell amazing as it cooks too!
