Lentil Sloppy Joes

Omg you guys!  Lentil Sloppy Joes!  Where have these been my whole life???  Seriously delish.  The first batch of lentil sloppy joes went so fast that I had to immediately make a second batch.  I got the idea when someone posted a picture of their dinner in the Facebook group I run.  The girl who posted said she made up the recipe in her head with no measurements.

So I searched Pinterest and found this recipe.  I made mine slightly different with a few less ingredients.  Trying to keep things simple.  I used lettuce wraps for my lentil sloppy joes, but you can also use burger buns if you prefer.  If you love lentils, you may also like my red lentil soup and my green lentil salad.

Lentil Sloppy Joes

These healthy sloppy joes are vegan and gluten free.  Very easy and kid friendly too. You can eat them in a lettuce wrap like I have pictured, or you can serve them over a baked sweet potato.  I have also added avocado and vegan sour cream to this.  The sour cream is so good!

Slow Cooker Stuffed Peppers

I just love making slow cooker recipes.  This new slow cooker recipe I have for you today is Slow Cooker Stuffed Peppers.  I already have one stuffed pepper recipe on my blog, but I wanted to do this one in the slow cooker.  I used quinoa for the stuffing, but you could also use rice if you prefer.  Hard to make these stuffed peppers look good in a photo, but I promise you they are delicious!

Quinoa Stuffed Peppers - My Whole Food Life

I made the quinoa separately before adding it to the slow cooker.  This recipe is very easy and makes a lot, so you will have easy dinners all week long.  I used my dairy free cheese sauce in this recipe.  I also think my pizza cheese sauce would be good in this recipe.   I hope you enjoy this stuffed pepper recipe as much as we did!

Curry Kidney Bean Veggie Burgers

I just love homemade veggie burgers.  These Curry Kidney Bean Veggie Burgers are the latest recipe.  This recipe was inspired by my curried kidney beans and corn recipe.  It’s hard to make these Curry Kidney Bean Veggie Burgers look good in a photo, but I promise you they are delicious!  These veggie burgers are great on their own, or you can eat them on a bun.  I personally skip the bun and eat a couple patties with some veganaise.  I also serve them with a side of roasted vegetables.  So good!

Curry Kidney Bean Veggie Burgers - My Whole Food Life

These healthy veggie burgers are vegan and gluten free.  I also used almond flour instead of oat flour, so they are grain free too! 🙂  If you didn’t want to use almond flour, oat flour would also work well.  I think spelt flour would too.

I went a little overboard on the sauce with mine. 🙂  However, I decreased it in the recipe, so you shouldn’t have the same issue.  Either way this is delish!  This is a super easy recipe that only takes a few minutes to make.  If you wanted to boost the protein, you can add in whatever protein you like.

Easy Sesame Cauliflower (Vegan)

Easy Sesame Cauliflower.  My husband Marcus has been wanting to do a Sesame Cauliflower recipe for a while now.  Well he finally did and I am here to share this Sesame Cauliflower recipe with you!  Think sesame chicken minus the chicken.

This stuff was really good!  I could see this sesame cauliflower sauce being used on all kinds of things.  Like in a stir fry or as a veggie dip.  Or even a marinade.  I love recipes with multiple uses.  Don’t you?  Kind of like my Thai Peanut Sauce.

You can add all kinds of veggies into this recipe.   I could see snow peas, broccoli and red bell peppers being great additions.  Also mushrooms.

You can make the sauce and saute right away, or you can let the cauliflower and other veggies marinate for an hour or two.  I will definitely try the marinade next time!

Sweet Potato Pizza Crust

Omg this sweet potato crust is amazing!  The other day I came across this recipe.  It was on a blog called Breast Cancer Maven.  Check it out sometime.  She originally found the recipe on Blissful Basil’s website.  Check that blog out too.  Beautiful photos and great recipes.   I love sweet potato anything, so I knew I had to try it.  I made a few alterations to my recipe.  You have got to try this healthy sweet potato pizza crust!

Sweet Potato Pizza Crust - My Whole Food Life

The topping possibilities are endless.  I think my cashew pizza cheese would be excellent on this.  If I had any left, I would have used it.  I decided to top mine with spinach and avocado.  Next time I am definitely using the cashew cheese sauce!  This crust is so great.  It’s super crispy just how I like it.  The original recipe called for roasting the garlic and sweet potato.  I boiled my sweet potatoes, so I just used minced garlic.  You can most certainly roast the garlic and sweet potatoes if you prefer.  I also think this would be great with tomato sauce.
