I have a new entree idea for you.  Roasted Vegetables with Quinoa.  This recipe is super healthy and easy + you can really use any veggies you have on hand.

This meal is vegan and gluten free. Like I said before, any veggies work.  The veggies I chose for this recipe are the ones I like best.  I have also used Brussels sprouts, but I didn’t have any on hand at the time.

Simple Arugula Salad

It’s starting to warm up here in Dallas, so I am thinking about salads.  Starting with this Simple Arugula Salad.

Marcus is OBSESSED with arugula. He ate this entire salad in one sitting.  It’s that GOOD. I promise you will love it too.

This salad is filled with healthy ingredients and it has a lemon dressing that brightens it up even more.  I also LOVE to add avocado to all my salads.  Makes them extra delicious + you get the healthy fats to keep you full longer.

Veggie Loaded Chickpea Stir Fry

If you are trying to eat more veggies, you should try this Veggie Loaded Chickpea Stir Fry.  It’s super easy and you can really use any veggies you have on hand.  Just like vegetable broth, it’s a great way to use up leftover odds and ends in the fridge.

The chickpeas add protein to make this a complete meal. You could also serve it with rice or quinoa.  Toasted cashews would be a nice option too.

This is vegan and gluten free and grain free!  For a paleo version, you can skip the chickpeas and serve over cauliflower rice.

Edamame Black Eyed Pea Citrus Salad

I have a new salad recipe for you! Edamame Black Eyed Pea Citrus Salad.  Last week my husband and I went to Disney World to celebrate 10 years together.  For more vegan ideas at Disney, you can also check out this post.

We had dinner at Boma in Animal Kingdom one night.  I highly recommend!  This healthy salad recipe was inspired by one that we were served there.

 

Edamame Black Eyed Pea Citrus Salad

 

This salad comes together very quickly and would be great for a party. I think it’s best if you can let it marinate for 30 minutes before serving.  That gives it time for the flavors to marinate.

If you like my Texas Caviar, I think you should give this a try too!  If you don’t want to use edamame, green peas may also work.
