Snickerdoodle Caramel Ice Cream (Vegan)

Do you love snickerdoodles?  Or caramel?  I have combined both those delicious flavors to create this Snickerdoodle Caramel Ice Cream.

This snickerdoodle ice cream is bursting with flavor from the cinnamon and maple syrup + it has a scrumptious caramel throughout.

Have you ever checked the ingredient list on store bought ice cream?  Seems to me there are a lot of unnecessary ingredients in it.

Store bought ice cream is also usually really expensive.  This homemade ice cream recipe is super easy to make yourself.

I used full fat canned coconut milk to make this ice cream recipe.  It’s very important to use the full fat coconut milk to get that rich flavor that traditional ice cream has.

You can use almond or cashew milk, but keep in mind that the end product will be slightly icy in texture. If you are okay with that, feel free to use any milk you like.

Homemade Ding Dongs

3 words for you.  Homemade Ding Dongs. The other day in my Facebook group, a member posted a pic of some store bought Ding Dongs from Whole Foods.  She asked if I could make a homemade version and I gladly accepted the challenge!  I love the challenge of making copycat recipes. Just try my Gluten Free Samoas or my Grain Free Twix Bars for yourself.  Unlike the store bought one, my version is free of refined sugar, gluten, eggs and dairy!

I got a little over-zealous and took the photograph before I added the chocolate coating.  I will definitely make sure to add those instructions in the recipe though.  I hope you enjoy these Homemade Ding Dongs as much as we did! The recipe is a little involved, but totally worth it.

Chocolate Rice Crispy Squares

Chocolate Rice Crispy SquaresRice crispy treats are one of those iconic recipes from childhood.  Well, I just gave them a major upgrade with these easy Chocolate Rice Crispy Squares.

I love this recipe because it only contains simple ingredients.  It also only takes a few minutes to prepare.

These delicious chocolate bars are vegan and gluten free. They can easily be made nut free by using sunflower butter in place of the cashew butter.

I used brown rice cereal in this recipe.  Only ingredient is brown puffed rice. You should be able to find it at any health food store.  I have also seen it at Target on occasion.
