I work out a couple hours almost every morning, so I need a satisfying breakfast that can carry me through that workout.  One of my favorite breakfasts is overnight oats.  They are easy and require no cooking at all.  This new Chocolate Protein Overnight Oats makes the perfect pre-workout meal. Almond Butter Protein Bars (Vegan)

Almond Butter Protein Bars.  Have I told you how much I love almond butter?  I eat it almost daily.  One of my favorite healthy sweet snacks is a date stuffed with almond butter.

If you haven’t tried it yet, you really should.  Totally curbs a sweet tooth!  So I created these almond butter protein bars with that snack in mind.

These would be a great pre/post workout snack.  Most of the protein shakes on the market are full of unwanted ingredients or too much processed sugar.

Why not try these instead?  They are filled with wholesome ingredients.  They can be made in minutes and you could enjoy one with my Energizing Green Juice.

Almond Butter Protein Bars

Prep Time 20 min Serves 10 bars     adjust servings

Ingredients

Instructions

  1. In the food processor or Vitamix, grind the oats into a course consistency. 
  2. Add the remaining ingredients and mix until a sticky dough is formed. 
  3. From here, you can roll them into balls or make them into bars like I did.  I used an 8 x 8 pan, but I think a slightly smaller pan would work better.  If you use a pan, line it with parchment leaving enough room to come out the sides.  That way they will be easy to pull out and cut. 
  4. I used a pizza cutter to cut mine. 
  5. Let them chill in the fridge for about 30 minutes to an hour.  That’s it.  I cut mine into squares and got about 10 in my batch.  Enjoy!

These High Protein Breakfast Cookies are a must make! I am always trying to think of new ideas for quick breakfasts on the go.  That is where these breakfast cookies come in.

These high protein breakfast cookies are packed with good stuff like rolled oats, hemp seeds, coconut and sunflower seeds.

My daughter and husband loved these breakfast cookies too.  In fact, my daughter loves saying that she gets to eat cookies for breakfast!  This breakfast cookie recipe is also very versatile.  You can really make it your own.

These would be a great little snack to eat before or even after a workout.  They would be great to take on a hike too.  I spent the better part of my twenties backpacking around the country and loved to munch on healthy treats like this one.

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients, except the dates, in one bowl. 
  3. Mix all wet in another.
  4. Add wet to dry.
  5. Fold in dates.
  6. Spoon batter onto a lined baking sheet
  7. Bake for about 15 minutes.
