Calling all ice cream fans!  This Salted Caramel Cashew Ice Cream is a must make.  I think it is my new favorite.

Before making this recipe, my favorite was the cherry chocolate chip ice cream.  The best part about this ice cream is that is has zero added sugar.

Raspberry Coconut Ice Cream (Vegan)

I use my ice cream maker at least once a week in the summer.  This Raspberry Coconut Ice Cream is my latest creation.  I just love the combination of raspberry and coconut, don’t you?

No Bake Snickerdoodle Truffles (Vegan)

Put these No Bake Snickerdoodle Truffles on your must make list!  When I was shopping at Whole Foods the other day, they were giving out samples of these vegan snickerdoodle truffles.

While they were very delicious, the ingredients were definitely not the healthiest.  So when I got home, I set out to make my own version and I think they came out pretty good.

Snickerdoodle Caramel Ice Cream (Vegan)

Do you love snickerdoodles?  Or caramel?  I have combined both those delicious flavors to create this Snickerdoodle Caramel Ice Cream.

This snickerdoodle ice cream is bursting with flavor from the cinnamon and maple syrup + it has a scrumptious caramel throughout.

Have you ever checked the ingredient list on store bought ice cream?  Seems to me there are a lot of unnecessary ingredients in it.

Store bought ice cream is also usually really expensive.  This homemade ice cream recipe is super easy to make yourself.

I used full fat canned coconut milk to make this ice cream recipe.  It’s very important to use the full fat coconut milk to get that rich flavor that traditional ice cream has.

You can use almond or cashew milk, but keep in mind that the end product will be slightly icy in texture. If you are okay with that, feel free to use any milk you like.

Raspberry Coconut Mousse (Vegan)

Yum! Raspberry Coconut Mousse. Just because you are vegan, does not mean you need to give up desserts like mousse.  This healthy mousse is sure to please.

This healthy mousse can be made in a matter of minutes and it’s rich in texture and taste.  If you haven’t guessed by now, I just love the combo of raspberry and coconut.

If you love this combo as well, you may want to check out my Raspberry Coconut Muffins or my Raspberry Coconut Smoothie.  If you don’t want to use raspberries, you can always replace them with strawberries or any other fruit.

 

Raspberry Coconut Mousse

This heavenly raspberry coconut mousse is vegan, gluten free and paleo.   It only calls for a few simple ingredients.  Chocolate chips may be a nice addition as well.

I used fresh raspberries, but I am guessing you can use use frozen as well.  Just let them thaw and drain before you use them in this recipe.
