I share a lot of smoothie recipes on this site.  However, I have never shared a healthy dessert smoothie.  That is until now.  Today I am sharing this delish and decadent Toasted Coconut Vanilla SmoothieToasted coconut automatically makes everything better in my opinion!  This indulgent smoothie recipe makes the perfect sweet treat.  If you also like toasted coconut, you may also want to try my flourless toasted coconut cookies.

This recipe makes 2 servings, so you can half it for a single serving.  This dessert smoothie is vegan, gluten free and paleo friendly.  It also contains zero processed sugar.  I used dates to sweeten this.  The toasted coconut and banana also adds a nice sweet flavor.

I love smoothies!  They are quick to make, loaded with vitamins and my 3 year old will drink them!

Smoothies are also a great way to use up some veggies in your fridge.  That is what I did with this one.  It should keep you full until lunchtime.

Ingredients

  • 1 1/2 cups spinach
  • 1/2 large zuccini
  • 1 bunch parsley
  • 1/2 cup blueberries
  • 1 banana
  • 1/4 cup goji berries
  • 1 cup almond milk
  • Protein powder (optional)

Instructions

  1. Throw everything in the blender and blend until smooth.  I used a Vitamix.  Enjoy!

Mean Green Smoothie

My three year old daughter, Meadow, will not try spinach or kale.  That is….until I wrapped them up in a nice smoothie like presentation!

It’s only a little white lie that I told her we were having ice cream for breakfast, right?  It’s like the breakfast cookies or the donuts.  You just wrap the healthy food in a nice little kid friendly package and they cannot resist it.  In fact, she was so anxious to eat it, that she could barely contain herself as I was trying to snap some photos.

  • 2 cups kale stalks removed
  • 1 cup spinach
  • 1 cup frozen blueberries and raspberries
  • 1 1/4 cup almond milk
  • 1 frozen banana
  • 1 pkg raw vegan non gmo organic protein powder

Instructions

  1. Throw everything in the blender and blend until smooth.

This is a perfect breakfast to make for kids on the go.  In fact, you can wash and dry the veggies the night before so all you have to do is throw all the ingredients in.  Super easy!

Pumpkin Pie Smoothie!

So in mid September we got the girls a pumpkin for Halloween.

I guess we were excited and maybe got it too early, because it rotted into a pile of mush.  So we went out again, the week before Halloween and got another one.  We had intentions of carving it also, but didn’t get a chance.  So last night we decided to roast that sucker.

It took all night because we had to do it in pieces.  We are now swimming in fresh pumpkin puree!  I stuck half in the freezer, but used some of it to make some smoothies.  They were delicious!

Ingredients

Instructions

  1. Mix all the ingredients, except for the milk, together in a small bowl. 
  2. Put the mixture into an ice cube freezer tray and let  freeze for a few hours. 
  3. Take the frozen cubes out and throw them in a blender with the 1/2 cup milk. I used a Vitamix. 
  4. Mix until smooth.

Healthy Tropical Smoothie Peanut Paradise

I don’t know about you, but I LOVED Tropical Smoothie when I lived in Vegas.  I think I used to get one every week.  I would always get the peanut paradise because who doesn’t love peanut butter and bananas together? So one day I actually decided to look through the nutritional info they have at the counter.  I could not believe it!  It had 800 calories!  So, I decided to make my own version.  Mine only contains 315 calories and is super easy to make.

I feed this to my daughter for breakfast sometimes and add the flax.  She has no idea she is eating something healthy!

Healthy Tropical Smoothie Peanut Paradise

Prep Time 5 min

Ingredients

  • 1 frozen banana
  • 2 T fresh ground peanut butter ( I use Sprouts Organic)
  • 2/3 cup non dairy milk ( I use homemade almond milk , but soy would work fine too.)
  • If you wanted to make it even more healthy, you could add 1 T flax meal

Instructions

  1. Blend everything in a magic bullet until you get the consistency you desire.  I like mine thick so I can eat it with a spoon.  Sometimes, if I feel like getting crazy, I will through in some chocolate chips.
