Minestrone Soup (Slow Cooker Recipe)

Minestrone Soup.  I just love soups.  If you have been reading this blog for awhile now, then I am sure you have realized that.  This slow cooker soup is my latest recipe.

I also created a post recently including 6 Healthy and Filling Soups.  I will probably have to add this slow cooker minestrone to it.

Minestrone Soup

This healthy and hearty soup is hearty and filling and it was perfect for the chilly day we had inTexas yesterday.  Soups are great because they are very budget friendly.  They also freeze well, so soups are great for batch cooking.

10 Healthy and Filling Soup Recipes

We have had a crazy weird winter so far here in Dallas.  It’s snowed a few times, been in the 70’s a few days and poured rain so much my pool came close to over flowing!  Winter always puts me in the mood for soup.  So I wanted to write a post with some of my favorite soups.  Many can be made in the crock pot.  Slow cooking soups just makes them so much better!  My favorite soup is the Carrot Ginger Coconut Soup.  Yum!

Rustic Tomato Soup (Vegan and Gluten Free)

Rustic Tomato Soup.  I love tomato soup.  I used to be a huge fan of the kind in the can.  I had never attempted my own tomato soup before until now.

It came out really good.  I always thought soup was one of the harder meals to make, but really, it is so easy.

You simply just throw everything in the pot and walk away.  Now that is my idea of cooking!  I even chopped up all the veggies in the food processor instead of hand dicing them.

I made mine on the stove, but it would be extra good in the crock pot too!  We just have a small crock pot and I wanted to make a good amount of soup so I could freeze some.

Black Bean Vegetable Soup

Who doesn’t like a good homemade soup on a cold winter day?  Especially if you have been out dealing with the crowds shopping this time of year.  It’s nice to kick off your shoes and curl up with a warm bowl of homemade soup.  This Black Bean Vegetable Soup is the perfect comfort food to warm you up.

We made this soup with vegetables we had gotten in our organic co op basket.  My husband wanted to do the Mexican add on this week, so this soup has a bit of a kick.  Just a warning.  Personally, I am quite wimpy when it comes to spices. Growing up in Boston, we didn’t eat much spicy food.  So this is more a soup for my husband than for myself.  It made about 5-6 servings so you could freeze some for later if you want.  I actually do that a lot.  So here is the recipe.

Black Bean Vegetable Soup

Black Bean Vegetable Soup

Prep Time 20 min Cook Time 5 hr

Ingredients

  • 1 onion diced
  • 4 carrots cut in circles
  • 4 celery stalks chopped
  • 5 tomatoes chopped
  • 3 cups black beans (soaked overnight and then boiled until soft)
  • 2 green peppers chopped
  • 5 cloves garlic minced
  • 2 cups corn (we used organic for all of you wondering )
  • 1 bay leaf
  • 4 cups vegetable stock
  • 1/2 T cumin
  • 1 cut up chipotle chile

Instructions

  1. To save my eyes from burning, I usually cut the onions in the food processor .  In fact, if you want to make it easy, you can chop the veggies up the night before.
  2. Once the beans have been cooked to get a little softer, throw everything in the crock pot   and cook on low for at least 4-5 hours.
  3. You can cook it on high for 2-3 hours if you wish.

Recipe Notes

The longer it cooks the more flavor the soup will have. This should last at least a week in the fridge and up to 6 months in the freezer. That’s it.

Hearty White Bean Soup (Vegan, Gluten Free)

I live in Texas and yesterday a cold front blew in making it a perfect time for a Hearty White Bean Soup.  We have been enjoying quite a mild fall season.

The onset of this cold front prompted me to make this white bean soup in the slow cooker. It was very easy and warmed up me right up.

Recipe Notes

The longer you can let it cook, the better. I would suggest waiting to salt the soup after everything has had a chance to cook. If you salt a soup too early, you run the risk of it being too salty as some of the liquid inevitably boils off. Enjoy!
