Easy Tomato Summer Salad (Vegan, Paleo)

I am a huge salad freak.  I love all kinds if you haven’t guessed by now.  I really enjoy the simplicity of this easy tomato summer salad.  You can make it with just a few ingredients.

You may already have them all in your pantry.  This tomato summer would be great for any summer party.  It fits any diet since it’s vegan, gluten free and paleo.

Quinoa Vegetable Stir Fry

Stir fries are a great way to use up odds and ends in the fridge.  This Quinoa Vegetable Stir Fry comes together very quickly.  I always keep some cooked grains or quinoa in the fridge to add to meals like this.  This quinoa stir fry recipe is very versatile.  Just use it as a base to add whatever veggies you like.  I happened to have a couple orange peppers sitting around, so that was my starting point.  I also love broccoli in my stir fries, so I made sure to add it.

I made you guys some Tomato Roasted Brussels Sprouts! We have been staying with my in-laws during our home renovation.  My mother in law turned me on to yet another delicious way to roast Brussels sprouts. This recipe is super easy and it uses ingredients you already have in your kitchen.  These tomato roasted Brussels sprouts are great as a side dish, or you can serve them over quinoa for a complete meal.  If you also love Brussels Sprouts, you will also like my maple glazed Brussels sprouts are my shaved  Brussels sprouts salad with a lemon vinaigrette.

This Brussels Sprouts Salad with Almonds and Dates may be my most favorite salad ever.  I know I said that about my quinoa salad with avocado and tomatoes, but this is just as good!  You all know I love Brussels sprouts recipes.  Especially my maple glazed Brussels sprouts.   You have got to try this one!

I love the flavors in this.  The dates help balance out the acidity of the dressing.  This salad is very easy to prepare and should last several days.  However, I would only add the avocado right before you are going to eat it.  Otherwise, it will get too mushy and brown.  I hope you enjoy this as much as I did!

Chard and Chickpea Soup

Today I am really excited to talk about my friend Ricki Heller’s new cookbook.  It’s called Living Candida-Free: 100 Recipes and a 3-Stage Program to Restore Your Health and Vitality.   You may already know Ricki from her blog Ricki Heller. She is also the author of Naturally Sweet & Gluten-Free: Allergy-Friendly Vegan Desserts: 100 Recipes Without Gluten, Dairy, Eggs, or Refined Sugar.  All her recipes are vegan and gluten free.  For those of you unfamiliar with Candida, it is a fungus in the form of yeast.  It lives in your mouth and intestines and it helps with digestion.  When you have a Candida overgrowth, it can cause many issues.  The main one is a leaky gut.  Some of the signs and symptoms are: brain fog, frequent yeast infections, autoimmune disorders, skin issues and mood swings or depression.   This book not only goes into great detail about Candida and how to fight it, but Ricki shares her own personal story.  This is so much more than a cookbook.
