Spinach Chickpea Omelets (Vegan)

On occasion I like to eat a savory breakfast. Sometimes you need a change from overnight oats.  That is why I make these Spinach Chickpea Omelets.  Before I became vegan, I LOVED eggs.  They are actually one of the only animal foods I miss.

These chickpea omelets fill that void though.  I eat one of these with a side of roasted veggies.  So good and it’s a great way to get more veggies into your diet.

While this recipe is written with spinach, you can use the recipe as a base to add in whatever veggies you like.   I originally saw the recipe for chickpea omelets on this website.  I have changed up the original recipe quite a bit.

You can make these 2 ways.  Make the batter thicker for more of a pancake feel, or make the batter thinner, to make them more of like an omelet.

I personally like the pancake option better, but that is just me.  I serve this with a side of roasted vegetables.  My favorite vegetables to eat with this are sweet potatoes and Brussels sprouts. Yum!

Balsamic Roasted Tomatoes

Whenever I have veggies that look on the verge of going bad, I roast them.  That is exactly what I did to these Balsamic Roasted Tomatoes.  These are so delicious you guys!  You can throw them in zoodles or regular pasta, add them to stir fries or just eat as a side dish.  They are also good for homemade pizza. One of the easiest recipes you will ever make.

Thai Coconut Rice

My husband comes up with a lot of the savory recipes on this blog.  This Thai Coconut Rice is one of his creations.  He loved it so much that he declared, “This ranks right up there with the Peanut Noodle Stir Fry!”  If you have made that recipe, then you know that is a high compliment.  He made this a little spicy, but you can certainly omit the jalapeno pepper if you don’t want the heat. Some of the other recipes he has made are Homemade Sriracha and Sweet Potato Chili.

Mexican Rice (Vegan and Gluten Free)

Mexican Rice that is vegan and gluten free.  My husband is the spicy food lover in this family.  This Mexican Rice is his recipe.  He made it the other day when he was trying to use up all the food in the fridge.  That first time he didn’t measure anything.

It was so good that he had to re-create it with measurements so he could share it with all of you.  Some of his other recipe creations are the Peanut Noodle Stir Fry and the Sweet Potato Chili.  Also the Pumpkin Enchiladas. I hope you enjoy this recipe.

Balsamic Sweet Potato Pasta

I know we have all heard of zucchini pasta, but have you tried sweet potato pasta?  You have got to try this Balsamic Sweet Potato Pasta with Caramelized Onions.

 

Quite possibly one of the most delicious meals I have made in a while.  It was one of those meals I threw together as I was trying to use up some odds and ends in the kitchen.  It was so good, that I had to share it with you!

I used a spiralizer to make the pasta.  I have the Paderno.  It’s one of the only spiralizers that can do hard veggies like sweet potatoes and beets.

Sweet potato pasta is life changing!  You have to try it.  This recipe is vegan, gluten free and paleo.  Super easy to whip up too.

Soba and Zucchini Noodle Bowl

A few of the other meals I am looking forward to making are the Bean and Chipotle Chili and the Roasted Veggies with Creamy Lime Hemp Dressing. The original recipe called for roasting the tomatoes, (which I am sure makes this even more delicious), but I was pressed for time, so I skipped that step. I will write the directions from the book if you care to make it the way it was written.
