Wild Rice, Spinach and Avocado Salad with Sesame Dressing

I have a ton of recipes pinned to try on Pinterest.  It had been awhile since I had tried a new one, so I plucked this up and tried it.  This lovely salad comes from Zizi’s Adventures.  She has a beautiful blog full of yummy recipes like this one.  It looked so good I had to try it.  It tasted AMAZING!  We actually made it twice since the first batch disappeared quickly.  I tripled the recipe and changed a few things the second time around.

This recipe has all my favorite ingredients.  In my world, avocados make everything better.  The original recipe called to cook the greens and garlic, but I like them raw better so that is how I did mine.

Wild Rice, Spinach and Avocado Salad with Sesame Dressing

Wild Rice, Spinach and Avocado Salad with Sesame Dressing

Prep Time 10 min Cook Time 1 hr

Ingredients

    Salad

    • 4-5 big bunches of baby spinach chopped (you can do kale as well)
    • 1 1/2 cups wild rice (cooked)
    • 3 avocados sliced
    • 2 cups or 1 can white beans (soak overnight and then cook until soft)
    • 2-3 cloves garlic minced or 2 tsp garlic powder
    • salt to taste

    Dressing

    • 6 T toasted sesame oil
    • 3 T rice vinegar
    • 3 T soy sauce or bragg's aminos
    • Juice of 1 lemon

    Instructions

    1. Cook the rice and let cool. I actually did this the day before. Same with the beans if using dried beans.
    2. In a large bowl, add rice, beans, avocado, garlic and spinach and mix well.
    3. In a small bowl, whisk the ingredients for the dressing.
    4. Pour dressing in the large bowl and mix well until everything is combined.

    I found the best way to do this was with my hands. This dish is best eaten fresh, but will still be delicious the next day. I makes about 5-6 servings. Enjoy!

    Healthy White Bean Pesto Dip

    Healthy White Bean Pesto Dip.  When I go to a party, I am all about the veggie platter. And what’s the best part of the veggie platter?  The dip of course! After all, hummus is life!

    This healthy white bean pesto recipe is to die for. Perfect for any veggie platter.  You can also serve it with chips.

    The creaminess of the white beans mixed with the basil and garlic really make the dish.  If you’ve never tried a white bean pesto recipe before, this is a must try.

    While most dips are loaded with fat, the good news is, this white bean pesto dip isn’t and it tastes just as good!  The secret ingredient… the white beans.  It gives this dip that creamy texture.

    Prep Time 10 min Serves 2 cups     adjust servings

    Ingredients

    • 2 cups white beans (We use dried beans and soak them overnight and then boil them in the morning until they are soft. About 20 minutes.)
    • 10 leaves of basil
    • 3 cloves of garlic
    • 1 T nutritional yeast
    • 1/4 cup olive oil
    • 1 T dried parsley
    • 1/2 T dried mint
    • 4-5 T water

    Instructions

    1. Throw everything in the food processor and blend until smooth. That’s it. Easy huh?

    You can use this recipe as a dip, or as a sandwich spread. Today I spread some of it on whole wheat lavash bread with some cucumbers and red peppers. It was yummy! It would also make a good pasta pesto sauce too. I hope you enjoy it.

    Hearty White Bean Soup (Vegan, Gluten Free)

    I live in Texas and yesterday a cold front blew in making it a perfect time for a Hearty White Bean Soup.  We have been enjoying quite a mild fall season.

    The onset of this cold front prompted me to make this white bean soup in the slow cooker. It was very easy and warmed up me right up.

    I love crock pot meals because you can throw everything in and walk away.  This crock pot soup is no exception.  It will fill your house with some pretty mouth watering aromas!

    This is the perfect soup for a day spent in your pj’s relaxing and staying in from the cold outdoors.

    Hearty White Bean Soup

    Hearty White Bean Soup

    Prep Time 30 min Cook Time 8 hr

    This hearty white bean soup will warm you up on the coldest of days and leave you wanting more.

    Ingredients

    • 4 cups veggie stock
    • 4 cups white beans (We use about 1 1/2 cups dried beans that expands to 4 cups after soaking.)
    • 3 cloves garlic
    • 6 organic carrots
    • 6 celery stalks
    • 1 bay leaf
    • 1 medium yellow onion
    • 1 T olive oil
    • 1 T parsley
    • 1/2 tsp sage
    • 1/2 tsp thyme
    • salt to taste

    Instructions

    1. In a food processor , finely chop the onion, celery, carrots, and garlic.
    2. Put everything in a crock pot , turn on low, and let the contents slowly get warm.
    3. After they are warm (about an hour), you can turn on high and let slow cook for some time.

    The longer you can let it cook, the better. I would suggest waiting to salt the soup after everything has had a chance to cook. If you salt a soup too early, you run the risk of it being too salty as some of the liquid inevitably boils off. Enjoy!
