Vegan Food in Disneyland

Rather than a recipe today, I am here to share Vegan Food in Disneyland. If you have been following this blog for awhile, then you know I love all things Disney.  Recently I was able to spend a day at Disneyland while in Anaheim for the Natural Foods Expo.

If you have ever thought about doing a solo trip to Disney World or Disneyland, I say go for it!  I was a little nervous going by myself, but I had a great time!  The weather was perfect too.  About 85 degrees and sunny.

In my backpack I carried into the park, I had a big hydro-flask, larabars and sunscreen.  Water fountains are everywhere in the park, so it’s easy to re-fill your bottle for free.  As an added bonus, the water at Disneyland doesn’t have the horrible aftertaste the Disney World water does. Yay!

2 Ingredient Almond Butter Cookies

The other day, I attempted to make a caramel almond butter, but had some difficulty with my blender.  So I turned the recipe into these 2 Ingredient Almond Butter Cookies.  They are delish!

This healthy cookie recipe contains ZERO added sugar.  They are even healthy enough for breakfast.  Yay!

2 Ingredient Almond Butter Cookies

This recipe happened by accident.  I was trying to make a caramel almond butter, but the whole mixture seized in the blender.  So I decided to change it up and make these no bake cookies instead.  I think they came out great.

If you love dates stuffed with almond butter, then this recipe is right up your alley.  It’s vegan, gluten free, grain free AND paleo.  I used salted almond butter in my recipe.  If you use unsalted, you may want to add some sea salt to the recipe.  I love the sweet and salty combo.

I have a new entree idea for you.  Roasted Vegetables with Quinoa.  This recipe is super healthy and easy + you can really use any veggies you have on hand.

This meal is vegan and gluten free. Like I said before, any veggies work.  The veggies I chose for this recipe are the ones I like best.  I have also used Brussels sprouts, but I didn’t have any on hand at the time.

Simple Arugula Salad

It’s starting to warm up here in Dallas, so I am thinking about salads.  Starting with this Simple Arugula Salad.

Marcus is OBSESSED with arugula. He ate this entire salad in one sitting.  It’s that GOOD. I promise you will love it too.

This salad is filled with healthy ingredients and it has a lemon dressing that brightens it up even more.  I also LOVE to add avocado to all my salads.  Makes them extra delicious + you get the healthy fats to keep you full longer.
