Chocolate Peanut Butter Cheesecake

My husband Marcus is a sucker for anything with chocolate and peanut butter.  So I created this Chocolate Peanut Butter Cheesecake with him in mind.  This healthy cheesecake is made with no refined sugar, gluten, grains or dairy!

Unlike traditional cheesecake, this recipe is no bake and can be made very quickly!

It starts with an almond date crust, then you have the creamy chocolate and peanut butter layer, and lastly, it’s topped with a decadent peanut butter frosting.  Yum! I could seriously have eaten the frosting by itself!  So good!

Vegan Egg Roll in a Bowl

Who doesn’t love an egg roll?  I can never find egg roll wrappers that don’t contain egg so I made this Vegan Egg Roll in a Bowl. It tastes exactly like the filling found in those delectable egg rolls, but without the fried wrappers!  I know typically egg rolls have added meat, so I added the sliced portoblello mushrooms to provide a meaty texture in place of the meat.

If you want to add some extra protein to this stir fry, you can add toasted peanuts or cashews.  Quinoa may be another nice addition.

There are a few things that make this recipe great.  They are vegan, gluten free and paleo approved.  The contain ZERO refined sugar, and there is no baking required!  Only 5 simple ingredients!

I have such a sweet tooth, so I am always thinking of new ways to enjoy sweets in a better way.  Since these contain a good amount of fat, and they are super rich, you don’t need much to satisfy.  I made mine in standard sized muffin pans and got 6, but you can do a bite size up if you like too!

Slow Cooker Cabbage Soup

I had some cabbage I needed to use up, so I decided to make this Slow Cooker Cabbage Soup.  It was very easy and came out great!  The best part is it only calls for simple ingredients you probably already have on hand!  This healthy soup is made in the slow cooker so it can cook even when you leave the house!

The other day when I sent Marcus to the store to get some diced tomatoes, he accidentally bought tomato sauce.  This soup was the perfect use for that sauce.  Plus, the house smelled so good when this was cooking!

This soup recipe makes a ton, but it freezes great.  I like to freeze it in serving sized containers so I can just grab and defrost what I need.  If you wanted to bump up the protein in this recipe, I think adding chickpeas or white beans would be good.
