Peanut Butter Granola Bars (Vegan)

Peanut Butter Granola Bars are very easy to make yourself. This recipe can be used as a base and you can add in whatever you like.  If you need a nut free version, sunflower butter works great in place of the peanut butter.

These bars are very similar to my Peanut Butter Banana Breakfast Cookies.  They came out yummy and were kid friendly too.  My little girl loved them!

 

 

It is all over Meadow’s face.  Even my mostly tube fed baby ate some!

 

 

This would make a good afternoon snack too.  I often snack on my homemade granola in the afternoons for a sweet treat.  You can find one of those recipes here.

Ingredients

Instructions

  1. Preheat oven to 350. 
  2. Mix all dry ingredients in one bowl. 
  3. In a sauce pan, on medium heat, combine the banana, peanut butter, maple syrup and milk. 
  4. Stir until combined. 
  5. Add peanut butter mixture to the dry ingredients and mix well. 
  6. Fold in the chocolate chips
  7. Line a pan with parchment paper. I do this because it is so easy to just lift them out of the pan and cut with a pizza cutter.  I do, however, reuse the same piece of parchment over and over again.  There is no reason to throw it away after one use.  I just store it in the cabinet with the baking pans.
  8. Bake them in the oven for about 20-25 minutes. 
  9. Let them cool completely before cutting.

Recipe Notes

I store them in a plastic container separated by parchment paper. They should keep for about two weeks, although mine will not last that long! Enjoy!

  1. Sorry, but this one wasn't a hit with my family. They came out tasteless and cardboardy. I hated to use up my raw honey on them too. Guess I'll have to try another recipe for this bunch.

  3. I love this recipe! I have made it a few times and I try a little something new each time. I use peanut butter so I cut down the salt. One day I didn't have enough oats so I popped in 1/2 c of quinoa and it turned out great! I increased the liquid to 3 tablespoons of milk and that softens the oats a bit for me. For the people how had the comments about the bars crumbling, I added about 5-10 minutes to the cooking time and I also put the mixture in a muffin pan for easy servings. By increasing the time and making the bars more compact (I press down the mixture), this makes the bars stay together. Keep those recipes coming!
  4. Just curious...did this recipe change? I have been making this for almost 2 years now and have it memorized. I came on today to check the temperature (bc I was blanking on it) and this is different than I have been making it. I thought it used to be baking soda and no salt, vs. the baking powder and sea salt listed above. I also don't remember that the wet mixture was to be heated. Please tell me I am not losing my mind. :) That being said, the way that I have been making it is great.....not complaining, just confused.

    1. I hit the link to this recipe today, after putting the bars in the oven, and guess what? The recipe on the site IS different than the one I have saved in my recipe folder. The recipe I have called for 1/4 tsp. of baking SODA, and no salt. I had saved the recipe in July of 2013, and am just now baking it. Clicking on the link that was within my saved recipe print sent me straight to this recipe that was different...You aren't crazy, Laura Donovan!
  5. Flavor is good but there must be something missing, such as a binder...mine wouldn't stay together in a bar form. It also is still an incomplete recipe. Ingredients list chocolate chips yet instructions never tell you when to add them? What size pan do you use? Once it was all mixed it was obvious I needed an 8x8 but didn't have it prepped until it was all ready to go.
    1. I folded the chocolate chips in at the end. This recipe is 2 years old and you are the first person to tell me about the chips. Thank you! I will edit the post. I used an odd sized pan. I think it was a 9x13? Did you press the mixture down firmly? That helps the bars stick together. Also it's important to let them cool before trying to cut. I am sorry yours did not stay together. :(

  7. Hi Melissa, are these supposed to come out crispy? Mine were soft and chewy, I'm wondering if I didn't bake them long enough...
