Healthy No Bake Cookie Dough Bites.  Yes, you read that title right.  Healthy no bake cookie dough bites.  Such a thing does exist!  Who doesn’t love cookie dough?

These are sinfully good even with no refined sugar.  These no bake cookie dough bites may just be the most delicious things I have ever made.  It gets even better.

They only take minutes to make.  You could just be minutes away from popping one of these babies in your mouth.  I am drooling just looking at the picture.

Ingredients

Instructions

  1. Throw the almonds and oats in the food processor and blend into a fine powder.
  2. Then add dates and continue to blend. 
  3. Lastly, add the water, a little at a time until a paste like dough forms. 
  4. Roll dough into little balls and place on a lined baking sheet. 
  5. Put into the fridge to get the dough to firm up a bit.  Eat and enjoy!

  1. Just made these and they are cooling in the fridge.. But of course I had to eat a couple scoops while forming the balls. Delish!! the dough was super sticky.. Is that normal? I used some coconut oil on my hands to help but should i have added more water?I did them in my Vitamix (which I was nervous about) and they turned out great. Although a pain in the booty to get out of the bottom of the canister! This was my first experience using medjool dates, and won't be my last.. Just the right amt of sweetness.. Next time I will make sure I have the chocolate chips on hand too! Thank you!!
    1. I'm glad you like them! The dough is very sticky. Usually I wet my hands slightly so it's easier to roll them into balls. They should firm right up in the fridge.
  2. Thanks for this & all your great recipes. I've made these a few times now, adding raisins or cranberries, hemp or sunflower seeds. Great snack, but addictive:)
  3. I made these yesterday & I really like them! I had 2 for breakfast this morning with my coffee - scrumptious & filling! I added some semi-sweet chocolate chips into the mixture & it was perfection. I can't say it really tastes like cookie dough, but I like the taste anyways! I will be making these again sometime!
  4. These are delicious! I used cashews instead of almonds, but will definitely make them again and again! I also used a small cookie dough scoop instead of rolling them with my hands. Next up- no bake snickerdoodle bites!
