Coconut Cream Larabars

These Coconut Cream Larabars are where it’s at. No matter who you talk to, most everyone seems to love larabar,  My two most viewed posts on the blog are the Peanut Butter Granola Bars and the Homemade Clif Bars.

The first larabar recipe I created was the chocolate brownie.  I think these healthy larabars came out even better!

These literally took about 5 minutes to make.  Can it get any easier?  I love recipes like this.  The store bought Larabars cost $1.50 a piece.  That can get pretty pricey if you are buying a lot of them.  So here is my recipe.  I hope you like it as much as we did.

Prep Time 20 min

Instructions

  1. Mix the almonds, coconut and cashews in the food processor until fine.
  2. Then add the dates, oil and water and pulse until a dough forms.
  3. Line an 8X8 pan with parchment paper leaving enough room for some to come out the sides. That way, the bars will be easy to remove and cut with a pizza cutter.
  4. Press down the down so that it is packed well and place in the fridge to set.
  5. It will take an hour or two. Slice and eat. These should keep in the fridge for a couple weeks.

  6. Thanks for this recipe! Awesome. I substituted Brazil nuts for cashews it turned out so good! Next time I will use less coconut oil though (maybe the brazil nuts added a lot of oil.) FYI: brazil nuts are supposed to be great for anti-inflammation. Thanks again!

  9. Have stumbled upon your website recently and made these to bring to site with me for a healthy snack and oh man do i love them! Also made the Chocolate chip cookie dough larabars as well.
  10. Is there a really good food processor you can recommend? have you tried using a blender. I really love Larabars and I really need to attempt to make them since where I am from in Nunavut, Canada which is considered a remote location so of course these bars are expensive. How long would you heat up the coconut oil?
    1. Yes! I have this one and LOVE it. Worth every penny. I use it every day. http://tinyurl.com/processor-mwfl I have never tried these bars in the Vitamix, but I know people have done it. Just leave the coconut oil in a warm place until it turns to liquid.
      1. So I borrowed a friends food processor, I could not find raw cashews so I used walnuts and I also added a little bit of Enjoy Life mini chips< I hope they turn out good :) they are firming in the fridge right now!! can't wait!
          1. They turned out really good! although I think the cashews would have made them a little tiny bit better! I will pick up some raw cashews at bulk barn when I am south again. They also firmed up really nicely in the fridge overnight. I just gave one to my co worker but I did not tell him what was in it, I want to see what he says. :)
