These Coconut Cream Larabars are where it’s at. No matter who you talk to, most everyone seems to love larabar,  My two most viewed posts on the blog are the Peanut Butter Granola Bars and the Homemade Clif Bars.

The first larabar recipe I created was the chocolate brownie.  I think these healthy larabars came out even better!

These literally took about 5 minutes to make.  Can it get any easier?  I love recipes like this.  The store bought Larabars cost $1.50 a piece.  That can get pretty pricey if you are buying a lot of them.  So here is my recipe.  I hope you like it as much as we did.

Prep Time 20 min

Instructions

  1. Mix the almonds, coconut and cashews in the food processor until fine.
  2. Then add the dates, oil and water and pulse until a dough forms.
  3. Line an 8X8 pan with parchment paper leaving enough room for some to come out the sides. That way, the bars will be easy to remove and cut with a pizza cutter.
  4. Press down the down so that it is packed well and place in the fridge to set.
  5. It will take an hour or two. Slice and eat. These should keep in the fridge for a couple weeks.

  1. Wheee do you get your dates? The only place I've found them around here is Fresh Market and they're about $10 for a small container. Is that normal?
  2. I just made them & put them in the fridge! They will be ready & waiting when my kids get home from school. I can't wait to taste! I might reduce the oil a bit, as they seem a bit oily, but will decide after they are set & tasted. I'm always looking for healthy snacks for my kiddos! Thank you so much!
  3. I went with another commentor's suggestion of adding cacao and almond extract to make them Almond Joys and WOAH!!! Totally blown away. I will have to try the original recipe next time. These were just wonderful, having a healthy slice of heaven!!
      1. Yeah! That was my recommendation. Glad you like our family's variation. My teenage daughter and I make these almost weekly. It satisfies our sweet tooth, and our hunger.
  4. I've just made these and they're soooo yummy and so easy! I was fresh out of almonds so I substituted some old-fashioned oats and threw in a splash of vanilla. I also added a handful of chia seeds. Yum! Thank you :)

  6. I was wondering where you get your nuts and seeds. My daughter has Celiac disease and cannot eat things that are processed on shared equipment with wheat products. Most seeds and nuts are processed on shared equipment. thank you
    1. I get them in the bulk bins at Whole Foods. If you look at the labels, they should have that listed. There is also nuts.com. Maybe they have nuts that are not on shared equipment.
  7. These are amazing! I once had some coconut coated cashews from Trader Joes, a long time ago and loved them. These taste exactly the same! So good.
  8. These are so yummy! I also used (more) regular dates, plus the almond because I put it in just about everything 'sweet'. Made a batch for my busy-life sister for her birthday so she'd have a healthy on-the-road snack. Keep the great recipes coming!
  9. Love, Love Love these!! Trust me people, you will need to make a double batch!! I added about a cup of Popped Amaranth to up the protein etc Perfect!
  10. I have tried many of your recipes, and this remains a favorite! It is amazing how simple it is, but so yummy! I find that after a week, these seem to absorb the "flavors" of my fridge, so I need to eat them before then, but that's certainly not a problem! Thank you for this great site!
    1. I think I use the dried medjool dates as well. You shouldn't need to soak them at all unless your food processor isn't very powerful.
        1. OMG these are AMAZING!!!! I also made the chocolate ones. Not that chocolaty, really sticky, and I the almonds didn't chop very well. But they still tasted pretty good :-)

  12. This is the first recipe I've tried from your site and I am happy with the way they turned out! However, I must add, that I have never worked with dates before and I had no idea they had pits in them. Not only did I have to dig them out of the dough, but the terrible sound they made in my food processor worried me! This probably makes me sound a little daft, but maybe you could mention in the recipe to remove the pits (for other kitchen newbies like me, lol). Thanks for the great recipe! I look forward to trying many more!
