Homemade Nutri-Grain Bars

Who doesn’t like a Nutri-Grain bar? I made you Homemade Nutri-Grain Bars!  I used to eat them like crazy until I liked at all the ingredients in them.  If you read it as well, you probably know that they are laden with way too many chemicals and artificial dyes.

So naturally I had to create my own homemade nutri-grain bars.  My homemade nutrigrain bars tastes so much better and it’s made from wholesome ingredients.

Sadly, it took me two tries.

I did some tweaking the second time around and they still didn’t look that pretty, but I thought, what the heck, I will post them!  The second time I learned from my mistakes so hopefully, these will be easy for you to make.

I filled them with pureed dates and also with a fruit spread. I personally liked the dates better as a filling, but use what ever you like.  I know many people have said they filled them with homemade Nutella.  I bet that is amazing too! I’m not sure I trust myself with something like that haha.

Ingredients

    For the bars

    For the filling

    • Your favorite fruit spread or 12 medjool dates blended up into a caramel with a bit of water

    Instructions

    1. Preheat oven to 350.
    2. In a food processor, grind up the almonds and oats. Measure them before grinding. 
    3. Once they are ground into a slightly course consistency, add them to a bowl with the rest of the dry ingredients. 
    4. In another bowl, add the wet ingredients. 
    5. Add dry to wet and mix just until combined. 
    6. Gather the dough into a ball.  It will be a bit sticky. 
    7. Wrap it in plastic and place in the fridge for about 30-60 minutes to firm up. 
    8. Once firm, cut a piece of parchment paper the size of a baking sheet, and lay it on the counter.
    9. Cut the dough ball in half.  I used a bench scraper to cut mine. 
    10. Take one piece and roll it out onto the parchment, putting some plastic wrap between the rolling pin and dough. 
    11. Roll it until it is about 1/4-1/2 inch thick. 
    12. Spread jam onto the top. 
    13. Roll the second ball of dough the same way onto another piece of parchment. Place that onto the dough with the jam. I made sure all the sides were sealed up. Then slice into squares with a pizza cutter. Bake for about 13 minutes. These should last a week or two. You can freeze them as well.  Remember to save your parchment paper.  You can re-use the same piece over and over again.  Enjoy!

    1. These look crumbly. Not sure I am going to make them. I've tried a few of your recipes that call out name brands and they don't really taste like the original. Are these different? Thank you!
      1. I am sorry that you haven't liked some of the others. They are not crumbly at all. The homemade versions are not going to taste exact because they contain only healthy ingredients and no processed sugars. If you don't think you are going to like them, you don't have to try them. I do get a lot of compliments on my recipes, but I understand they are not for everyone.
        1. I agree with you Melissa! It's impossible for homemade versions to taste like store bought ones full of nasty stuff. You do a great job at your recipes and anything homemade has a much better taste anyways!
        2. I'm looking forward to trying these. I have people tell me that they just "like the way some store-bought, processed foods taste" too. For me, if I'm aware of what ingredients are in them, then it changes how I think it tastes when I'm eating it. I've preferred to experiences new tastes that are different than fast food, store-bought foods, etc. but super tasty in their own right, just different.
      2. Katherine, that's fine if you don't like them or think you'll make them...just pass the recipe by, but there's no reason to mention it here. If you want "real" tasting Nutrigrain bars, then they are simple to buy at the store. I *am* going to try these (and I'm definitely making more of the coconut cream Larabars, since they are fabulous!). My kids tend to not like traditional granola bar type recipes, but I think they'll like these. I'm looking for lots of ideas for homemade snacks for our upcoming 12-hour road trip (each way!).

      3. they look great and taste amazing I ABSOLUTELY LOVE THEM! i am 13, i love to cook and i made them- im doing a challenge- not to eat chocolate, lollies, fizzy drinks and little to know sugar for a month- this recipe is perfect, there maybe cocoa in it but i let it slide, im trying to hide it from my brothers but its too good and my brothers are finding it! this recipe is awesome, not only is it great because its homemade but i think it tastes better than the ones you can buy from the shop 10/10!!!!!!!!!!!!!!!!!!
      4. Things on this website won't taste like the "real" thing because the "real" thing is filled with garbage that is killing your body. It does take some getting used to with changing up a diet, especially when you are so used to eating all of the processed crap that is available to us. Melissa, your recipes that I have tried have all been delicious! You can't please everyone, and everybody also has different likes/dislikes. Please keep posting all of these great recipes! You have helped me learn how to make healthy food taste yummy!

    4. What ratio of water to flaxseed do you use for your flax eggs? I have seen other people say to use 1:1, 2:1, and 3:1. Confusing!

      1. I have them in a glass cookie jar on my counter. If you intend to keep them awhile, you may need to refrigerate them.

My kiddos need a small breakfast snack in the mornings 3 days a week before day care (they eat their real breakfast there, but can't wait an hour, they are so hungry when they wake up!), and I used to buy the generic nutrigrain bars thinking they were a 'healthy' option.       1. I'm glad you found me too! I hope you enjoy me recipes. You can try using gluten free all purpose flour or gluten free oat flour. You may need to add an extra binder though. Maybe another egg? Please report the results. I would love to tell my other gluten free readers that it was possible. :)

    10. instead of grinding up 1 C of almonds, i would like to use almond meal (saves a step, lol.) what would be the equivalent? (in other words, how much ground almond are you left with when you grind up 1 C.) thanks!
      1. I used homemade, but if you are going with store bought, try to look for a brand that is fruit sweetened only. You should be able to find one at most grocery stores.
    11. Just made these! They are so yummy! I tinkered a bit replacing the oil with 1/2 a mashed banana & 2 Tbs of coconut oil. I also got a little over zealous with the water when I puréed the dates, so I panicked and added strawberries! Lol! I had to bake mine for about 16 minutes....probably because of my runny filling or the banana? Idk! But you have struck gold again with me and my family!
    12. Can I use gluten free all purpose flour instead? I am always willing to give recipes like this a try, I love to bake/cook and I love that they are healthier for you!
        1. I'm fairly new to your site, but have fallen in love with most of your recipes. I also have a problem with wheat & wheat products. If you substitute a gluten free flour for wheat flour, you'll need a high-quality xanthan gum (like Bob's Red Mill, available at many supermarket chains), or a good meringue powder. (If you buy Bob's Red Mill All-Purpose flour, the package label gives you some ideas about the proportion of xanthan gum to flour, depending on whether you're making biscuits or yeast bread, or whatever.) Just adding one more egg makes the dough sort of gummy, & then the bars get less tender, more leathery, in baking. Any more eggs, and they fall apart again.
          1. Thanks! I have made many gluten free baked goods and have never used xanthan gum. I have never tried this particular recipe as gluten free, so you may be right about this one.
      1. You can sub another oil if you like. Grapeseed oil would work. Just don't sub olive oil because it is not supposed to be used in cooking.
    13. I love your recipes, but I am out of coconut oil. Do you think these would turn out alright w/o the oil? How should I modify the recipe? MJ
      1. You can sub out the coconut oil for another oil, more applesauce or even yogurt. It will change the texture slightly if you use no oil.
    14. Have you tried freezing these? I like to cook in bulk & freeze when possible. My 19 month old loves Nutri-Grain bars, but I am desperate for a healthier version and would love to try this!
