Peach Chia Jam (No Refined Sugar)

Peach Chia Jam.  I made you a chia jam!  Are you seeing the peaches show up at your grocery store?

We are well into summer here in Texas, so I thought I would make some peach chia jam.  It turned out so good.

The best thing about this peach chia jam, is that there is no canning, boiling or pectin involved!  The chia seeds do all the work.  This chia jam is made in the refrigerator.  Super easy!

Another great thing about this jam is that it contains no added sugars.  Peaches are so sweet on their own, so I didn’t feel the need to add anything extra.

However, if you like things a little sweeter, you can probably add a couple teaspoons of maple syrup or raw honey.

This jam needs to be stored in the fridge and it should last a couple weeks.  It’s great on toast, on top of yogurt, or even as a pancake topping!

Apple Spiced Refrigerator Jam

You need to try this Apple Spiced Refrigerator Jam.  Everyone likes a little jam once and awhile.  Most store bought jams contain too much processed sugar.

Did you know you can easily make your own jam recipe without processed sugar, pectin or canning?  I already have Blueberry Chia Jam on the blog.

Since it’s almost fall, I thought I would make one that incorporated those flavors.  This apple spiced jam recipe came out great.

This is it and it couldn’t be any easier!  I used chia seeds to help gel up the spread.  This will literally take minutes to make.  Spread it on toast, swirl it in yogurt, or even use it as a pancake topping!  It would be great in overnight oats as well.  Yum!

Apple Spiced Refrigerator Jam

Prep Time 10 min Serves 8 oz.     adjust servings

Ingredients

  • 2 apples peeled and cored (I saved the peels because my daughter likes to snack on them. Any apples will do. I used gala.)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cloves
  • 2 T maple syrup (This is optional. Taste the mixture and if it's not sweet enough, add the syrup.)
  • 2-3 T chia seeds

Instructions

  1. In the food processor , blend up the apples.
  2. Then add in the remaining ingredients and mix well.
  3. Put the jam in a covered container and set it in the fridge to set up. Takes about 30 minutes to an hour.

This made 8 oz of jam. I store mine in mason jars , but you can use any container. It should last a few weeks in the fridge and you can also freeze it for longer storage. Enjoy!

Blueberry Chia Jam (Vegan)

Blueberry Chia Jam is super easy to make! I first got the idea of doing a chia seed jam from my friend Miryam over at eatgood4life.com. Did I mention she is also selling an ebook? Check it out if you get the chance.

Her recipes are great! Anyway, she came up with this recipe and I knew I had to make it! I used blueberry instead of raspberry for mine.

On Saturday, we picked up our co-op basket. This week, there was an optional add-on for 12 pints of organic blueberries. So we took it! I already had used some of them to make my Grain Free Blueberry Tart. So with some of the remaining blueberries, I made this jam. Adapted from eatgood4life.com

This healthy chia jam should last at least a week in the fridge.  You can also freeze it for longer. It makes about 2 cups worth.  It also makes a great filling for my Blueberry Crumb Bars or my homemade Nutri-Grain Bars.

You can really use any fruit you like to make this.  I have also used apples and peaches and both jams turned out great.  The apple spice jam was great for Fall.  You can also put it in overnight oats.  Yum!

Once it’s set, use it as a topping for yogurt, on toast or even on waffles instead of syrup. My two year old absolutely loved it. Then again she does love anything chia seed related. She tears up my chia seed pudding . Enjoy!

Homemade Nutri-Grain Bars

Who doesn’t like a Nutri-Grain bar? I made you Homemade Nutri-Grain Bars!  I used to eat them like crazy until I liked at all the ingredients in them.  If you read it as well, you probably know that they are laden with way too many chemicals and artificial dyes.

So naturally I had to create my own homemade nutri-grain bars.  My homemade nutrigrain bars tastes so much better and it’s made from wholesome ingredients.

Sadly, it took me two tries.

I did some tweaking the second time around and they still didn’t look that pretty, but I thought, what the heck, I will post them!  The second time I learned from my mistakes so hopefully, these will be easy for you to make.

I filled them with pureed dates and also with a fruit spread. I personally liked the dates better as a filling, but use what ever you like.  I know many people have said they filled them with homemade Nutella.  I bet that is amazing too! I’m not sure I trust myself with something like that haha.

Ingredients

    For the bars

    For the filling

    • Your favorite fruit spread or 12 medjool dates blended up into a caramel with a bit of water

    Instructions

    1. Preheat oven to 350.
    2. In a food processor, grind up the almonds and oats. Measure them before grinding. 
    3. Once they are ground into a slightly course consistency, add them to a bowl with the rest of the dry ingredients. 
    4. In another bowl, add the wet ingredients. 
    5. Add dry to wet and mix just until combined. 
    6. Gather the dough into a ball.  It will be a bit sticky. 
    7. Wrap it in plastic and place in the fridge for about 30-60 minutes to firm up. 
    8. Once firm, cut a piece of parchment paper the size of a baking sheet, and lay it on the counter.
    9. Cut the dough ball in half.  I used a bench scraper to cut mine. 
    10. Take one piece and roll it out onto the parchment, putting some plastic wrap between the rolling pin and dough. 
    11. Roll it until it is about 1/4-1/2 inch thick. 
    12. Spread jam onto the top. 
    13. Roll the second ball of dough the same way onto another piece of parchment. Place that onto the dough with the jam. I made sure all the sides were sealed up. Then slice into squares with a pizza cutter. Bake for about 13 minutes. These should last a week or two. You can freeze them as well.  Remember to save your parchment paper.  You can re-use the same piece over and over again.  Enjoy!
