Lemony Cookie Dough Bites

Lemony Cookie Dough Bites that are vegan and gluten free.  I love lemons.  I put them in my daily juice.  I just love the way they smell and how they seem to freshen a recipe up.

I have plans for a lemon bar, but for now I just made these little bites.  I was inspired by the sweet and lemony taste that sugar cookies have.

Lemons are rich in vitamin C, so they can help protect you from colds and the flu.  Lemons can help cleanse and detoxify your liver.  They also contain 22 anti-cancer compounds and can help slow the growth of cancer.

A lot of people start their day with a large glass of water with lemon to help awaken the digestive system.  These little bites are really simple to make and only call for a few ingredients.

If you want to make the lemon taste even stronger, you can add a couple teaspoons of lemon juice as well.  My daughter and I filmed a short video about making these.  Despite an almost tantrum, I’d say things went well.

  1. I truly love you site and thank you for all the hardwork you do to help people eat better, and still not miss the taste. :-) These and all you recipes look and sound amazing. I was just wondering what brand of food processor you use. I want to invest in a good one, but not break the bank in doing so. Thank you in advance.
    1. Thank you Valerie! I have this food processor and it's a great deal for the price. http://tinyurl.com/processor-mwfl
  2. I LOVE lemons but I'm doing the GAPS diet currently and can't have the oats. Do you think I could substitute with a blend of almond flour and coconut flour? Thank you!
  3. I'm usually not the biggest lemony dessert lover, but I had to pin this recipe because they sound amazing. This would be a great dessert to bring to a group gathering instead of something more conventional (and unhealthy!) like lemon bars.
  4. These look and "smell" amazing, Melissa! Yep, I'm one of those people who starts a day with lemon squeezed into a glass of water. Dr.Oz recommends the water to be warm and lemons organic.
      1. It's definitely good that you add lemon to you morning juice.:) But there is something extra special to drinking that warm lemon water on an empty stomach! It cleans your gut (pardon me) and prevents colon cancer etc.
  5. I'll love the lemony bites, my husband will love the high protein bites and our kids will probably love them all! Thanks for posting these great healthy recipes. Oh, did I mention we'll ALL like the Cuisinart food processor! Thanks for this opportunity. Best luck to all :)!
  6. You always have the best recipes! For a girl with a sweet tooth they have saved me so many times! Trying these for sure!
  7. Yum! I've always meant to try one of these no-bake bites recipes, but never seem to get around to it, which is silly seeing as they're made to be quick and easy! I'm on a lemon kick lately, though, so this could be just the push I needed...
  8. The flavor is awesome. Have you ever tried baking them to see how they might do to become more like a cookie - different texture, etc. They are wonderful as is, but just wondering.
  9. I flattened the balls with the bottom of a glass - baked them at 350 degrees for a little over 10 minutes on parchment paper of course - you have to watch them - they browned up nicely and now I have little cookies!
  10. As you know, I baked these and made them into "cookies" - now I am wondering about making them into bars - I notice that your bar recipes call for baking soda. What exactly does the baking soda do to the mixture? If I simply shaped the recipe onto the parchment paper and patted it down like for the other bars and bake it, would I need the baking soda? Easy enough to add but just wondering why it is in the other recipes for the bars? LOVE the flavor of this recipe.
  11. These are great!! I work out a lot and I love theses as a pre/post work out snack. I also did a slight varation, I added fresh cranberries as well as middle eastern bitter oranges. Absolutly great
  12. I have a severe nut allergy. Due to processing, l don't eat seeds either. Any ideas what l could substitute the cashews for to get the same consistency?
  13. I am relatively new to following your blog, but I have enjoyed several of your recipes. I just have to tell you how delightful it was to see this very real and very adorable video! Maintaining this blog must be very hard work, but you are doing a fantastic job! Thank you!
