Chocolate Peppermint Bites

My husband was a huge fan of junior mints.  They are kind of off limits now that he is vegan and eats no processed foods.  So I decided to try and make a minty treat he could enjoy. Chocolate peppermint bites.  These Chocolate Peppermint Bites came out great, and you can think of them like a a homemade junior mint recipe!

I think he was pretty pleased with the way these turned out.  They are so easy to make too.  Just a few minutes to throw together and then some time to chill in the fridge.  I rolled mine into big balls, but you can do bite sized ones as well.  These would be a perfect dessert for holiday parties too!

The perfect treat for holiday parties!

Ingredients

    For the balls

    For the chocolate coating

    Instructions

    1. In the food processor , mix the shredded coconut and the dates.
    2. Once they are blended, add in the peppermint extract and milk.
    3. Carefully roll the mixture into balls. It will be loose and feel like it doesn’t want to stick together, but trust me, it will firm up in the fridge.
    4. Set the balls into a small baking sheet covered with parchment paper .
    5. Put the balls in the fridge to chill. I waited about 30 minutes.
    6. While the balls are chilling, make the chocolate mixture.
    7. Heat all the chocolate ingredients in a saucepan , and stir until smooth.
    8. Using two forks, roll each ball in the chocolate mixture and set back on the baking sheet .
    9. Once done with all the balls, place them back in the fridge to set up.

    1. Junior mints were always a weakness for me too, so i feel your husband's pain. Generally, ( not necessarily for this recipe), do you think maple syrup is healthier than raw, unfiltered honey? And do you recommend almond milk over coconut milk in your recipes?
    2. These are delicious! I rolled mine into teaspoon size balls & it was just a little minty for the kids(who are teens & are accustom to York Peppermint Patties) I think next time I will flatten my balls into more of a patty. I am positive they will go over better with the kids in a patty shape.
    3. Another amazing recipe. Gonna have to figure out something without a food processor. Do have a small manual food chopper. Would that work or do ingredients need to be more blended to hold together?
    4. Any ideas for subbing coconut oil? My daughter has a nut allergy and I can't find coconut oil that isn't manufactured in a factory with tree nuts.
    5. I'm currently making these and having trouble with the chocolate coating. It's mealy and the oil has separated from the rest of the mixture. Thinking I might have overheated it. Any ideas?
        1. Yes, the oil needs to be melted at a very low temperature or it gets grainy and separates. Try a double boiler pan set or at the lowest temp on the stove. :)
    6. I am going to make these and put them in mini cupcake liners - put chocolate on bottom, the mint and then chocolate on top. I did that with some peanut butter patties and it worked great! I miss my mint candies!
      1. The mint is much stronger than the coconut, but you still may be able to taste it slightly if you are sensitive to the taste.
    7. This is going to sound silly but I'm new to using shredded dehydrated coconut. When using it in a recipe like this do you soak it in water first to hydrate it?
    8. i can NOT eat coconut, so do you have any ideas for a replacement that would give that mint some creamy goodness? thanks nicole'
    9. Just made these, substituting almond extract and Hawaiian Turbinado sugar for peppermint and dates. They're delicious! Thanks for the wonderful recipe!
    10. Can't wait to make these. I love peppermint patties! And they are low in sweetener. I love sweets and eat too many, so I appreciate your recipes with little or no sweetener.
