Zucchini Pasta with Avocado Pesto (Vegan)

A while back I got a spiralizer. For some reason, I hadn’t used it yet.  Until now.  I made this zucchini pasta.  I’m so glad I did. The spiralizer is super easy to use and it’s priced very well.

It makes great low carb noodles. This zucchini pasta with avocado pesto is delicious and low carb!  To get the Paderno Spiralizer, click here.

Zucchini Pasta

This whole meal literally took me 10 minutes to make!  Great for those busy days when you have little time to cook dinner.  Perfect for those hot days in the summer where you don’t want to be slaving over a hot stove.

You could top this with your favorite protein to make it complete.  Another quick meal on my blog is my Pesto Portobellos.

You can learn how to use the spiralizer by watching this short video.

    1. Me again :) What IS nutritional yeast? I've read the ingredient list and know it adds a ton of flavor, but it's full of things I don't have in my kitchen (how I *try* to shop). Thanks
    2. Made this tonight- Everyone devoured it and licked the dishes clean. Seriously amazing. Thank you for sharing this! discovered the recipe on findingvegan.com - Looking forward to using the avocado pesto for any everything! Cheers!
    3. followed the link to amazon, and now I have a "spirilizer' coming :) what's the purpose of the yeast in the recipe- is it for the vitamins, or for texture. I try and stay away from yeast, but wondering if sunflower seeds, or other nuts would work...
    4. I just ordered a spiralizer too! I've never been a fan of zucchini, but sliced this thin and with this recipe I could be! Can't wait to try it!
    5. I tried this recipe last night- fantastic!!! I used pinennuts instead of nutritional yeast, and it still came out really tasty.
