Pumpkin Coconut Fudge (Vegan and Paleo)

This Pumpkin Coconut Fudge is good.  So good that I had to keep it away from my family before they ate it all.  I still needed pictures!

It’s been raining for days here in Dallas, but today was clear enough for me to shoot them.  It’s very easy to make too.  If you love coconut and pumpkin, you will love this pumpkin coconut vegan fudge recipe!

Vegan, gluten free and grain free.  I do have to mention that the consistency of these is a little softer than my other fudge recipes.  It still does give you that melt in your mouth feel, but it’s softer, almost giving it a light texture as well.

Pumpkin Coconut Fudge

Prep Time 15 min Serves 6 cups     adjust servings

Ingredients

Instructions

  1. In a saucepan , on med heat, mix all the ingredients together and stir until combined.
  2. Pour the mixture into lined muffin pans . I used standard size, but mini muffin pans would work great too.
  3. Put them in the fridge to set. I gave them a few hours to fully set. I got 6 out of my batch. Should last a couple weeks in the fridge. Enjoy!

  1. These look wonderful! How different will the recipe turn out, do you think, if I use coconut oil in place of the butter? I know some recipes do okay with that substitute.
    1. I am not sure if coconut oil will work in this recipe. It may harden the fudge up too much. The coconut butter is really what helps give it a melt in your mouth feel. If you try it, let me know the results.
    2. Coconut butter or manna is totally different texture and taste and I would not recommend subbing. Maybe try coconut flaks ground up in blender or food processor. Coconut manna is basically coconut meat in a jar so oil cannot substitute it.
  2. I can't wait to try this! This is off subject but I'd like to make some bread in my bread maker and my recipe calls for bread flour. I know you're more if a sprouted-grain bread eater but do you have any idea what a clean alternative to bread flour might be? I've never used a bread machine before. Thanks for your help and, of course, for your awesome recipes.
    1. I don't have a bread machine, so I am not sure of a good replacement. I'm sorry I couldn't help much. :( I hope you enjoy my fudge recipe!
  3. Hi! Made these this afternoon... but I didn't have any coconut butter manna. I substituted with half peanut butter and half coconut oil. Not sure if it's the same consistency as yours or not, but they refrigerated nicely, and hold they're form... plus they are delicious! Thank you for such an easy recipe! :) p.s. my dogs got to help cleanup since all ingredients are dog friendly... they thank you too! :)

    1. The oil may harden it a bit more. You can try, but I am not sure if it will work. If you do try, please report the results!
  6. Is it possible as an additional ingredient, put actual coconut in this recipe too? Will it still bind together if you add coconut just for the texture?
  7. Just fantastic! I made this yesterday - it has a great texture and great flavor. Now if I can just keep my kids out of it! They loved it!
  8. These were amazing! They taste exactly like pumpkin pie. I made my own coconut butter by blending up 4 cups of unsweetened shredded coconut in the Vitamix for a few minutes. (It poured right out and wasn't a pain to clean - something I was worried about!) I poured the fudge in a small square container and got 16 pieces out of it. So tasty! Thanks for sharing your recipe.

  10. Just tried out this recipe and while my coconut butter was nowhere near as creamy as yours was, this still turned out great! I did put some coconut oil into the butter to try and smooth it a touch, which did help bring it together Book marking this great recipe - thanks for sharing
