Peanut Butter Chocolate Thumbprints

The holidays are here and everyone has cookies on the brain.  On Facebook, I recently asked what kind of cookie recipes you would like to see.  Many of you requested thumbprints.  Gluten free thumbprints to be exact.  Well I hope you enjoy this recipe for Peanut Butter Chocolate Thumbprints. Peanut Butter Chocolate Thumbprints - My Whole Food Life My husband said that these were the most delicious cookies I have made in a while.  Of course he is a big fan of chocolate and peanut butter!  You can also make this recipe using almond butter or sunflower butter for a nut free option. 

Peanut Butter Chocolate Thumbprints

Prep Time 10 min Cook Time PT10-12M Serves 18 cookies     adjust servings

Instructions

  1. Preheat oven to 350.
  2. Mix all the dry ingredients in a bowl and set aside .
  3. In a saucepan , on medium heat, combine the peanut butter, maple syrup, applesauce, coconut oil and milk.
  4. Stir until well combined
  5. Add peanut butter mixture to a mixing bowl .
  6. Slowly add in the dry ingredients while mixing. You may need to add bit more milk if the dough looks dry.
  7. Roll dough into balls and place them onto a lined baking sheet .
  8. Using your palm, press each cookie flat.
  9. Using your thumb, press a little hole in the center of each cookie.
  10. Cut chocolate bar into small squares and press a piece of chocolate into the center of each cookie.
  11. Bake in the oven for about 10-12 minutes.

Store cookies in the fridge so they last longer. They can also be frozen.

  3. The town I live in has a very small grocery store! Not too many healthy things. Can I substitute quinoa flour or coconut flour or oat bran. I have also garbanzo bean flour rye flour and flaxseed meal just wondering if I could substitute any of that ?. Thank you

  5. These were a big hit with the family last night! I subbed a mashed banana for the apple sauce and my nut butter was a mix of cashews and peanuts because that's what I had on hand (I found the banana tip here on another recipe). Thanks
