Zucchini Chips Made in the Oven

If you have never had Zucchini Chips, you need to try them!  Not only are vegetable chips a healthier alternative to potato chips, but they are also super addicting and very easy to make!  I actually thought these came out even better than my sweet potato chips.

These baked chips are vegan, gluten free and paleo.  The perfect snack for anyone and everyone.  Although you may not want to share them! 🙂  I did this recipe using two methods.  One was in the dehydrator, and the other in the oven.  I actually like the way they turned out in the oven better.

That was quite a surprise!  I kept my zucchini chips simple with just a little salt and oil, but you can season them any way you like.  They are great with salt and vinegar as well.  Yum!

Instructions

  1. Preheat oven to 215.
  2. Remove the ends of the zucchini and slice thin. Mine were about 1/4 inch thick.
  3. Lay the slices on a greased or lined baking sheet.
  4. Brush the slices with oil and sprinkle with salt.
  5. Bake for 2 hours in the oven, stopping to flip them halfway through.
  6. If you are using a dehydrator, set the temp at 135 and bake for 4 hours.

Recipe Notes

These shrink down quite a bit, so don't be afraid to load up the trays. If you have any left over, store them in an airtight container. To keep them from getting moist, scatter some rice at the bottom of the container. The rice will help absorb excess moisture.

  3. Hi! Tried making these today with grape seed oil instead of coconut oil. I cooked them for about 3 hours and they did not turn out! Any idea why?
    1. How thin did you slice them? They need to be very thin to get crispy. Did you use an oven or dehydrator? I found that they got crunchier in the oven. Sorry they did not work out for you. :(
      1. I find making the chips just a bit thinner and 48 hours in the dehydrator will make them nice and crisp, but without the browning. I usually mix them with apple slices to do the same, but I put a little cinnamon on them.
  4. Side note- I can only imagine if I were struggling with an addiction to drugs or alcohol and kept seeing the word "addicting" used to describe a healthy food. It trivializes a serious problem. Nice recipe :-)
      1. It is valid to call the love of food an addiction...for some people. I am a food addict. The only difference is, there are no rehabilitation places I can go to learn to stop the behavior. I must eat to stay alive. I never took offense to you saying it was addictive, that is just a common way to say it's yummy.
    1. The word "Addiction" is neither intened for or solely used for those of the substance abuse kind; it DOES aply to other things. Furthermore, to say a recipe or food is addicting neither offends or trivializes drug or alcohol addiction. (Now, if the recipe was called "As-addicting-as-crack zucchini chips", that would be another story.) Food CAN be addicting; all those fast food chains and franchises BANK on that fact. I think this comment is unfounded, inappropriate, and disrespectful to Melissa, who is just innocently sharing a simple, quick, easy, TASTY recipe. Geesh.

How long do you think these will stay fresh. My little brother is in the navy and is currently in Japan he doesnt really have access to fresh healthy food so I am trying to make things like this that I can send him. It will take about 2-3 weeks to get to him. Any ideas for other things I could send him?

  6. Hi. I tried this recipe with my hydrator. Four hours and the slices are still wet. Are the temperatures you quote Celsius or Fahrenheit?

  9. Love your website.Noticed you reccomend rice as drying agent in containers. I made little rice bundles using cheese cloth and cotton string. Look like the bags u get at weddings but rustic. Keep them clean and reuse. Making your chips for the USA World Cup game! Go USA!
