Lemon Coconut Overnight Oats

If you have been following this blog for a while, you know I am a huge fan of overnight oatsOvernight oats are just so easy and they require no cooking!  Overnight oats also travel very well. Since I love lemon and coconut together, I thought I would try the flavors in this Lemon Coconut Overnight Oats recipe.

This turned out really good!  If you love lemon and coconut together, then you will probably love this!  A super easy, healthy breakfast!

Lemon Coconut Overnight Oats

Prep Time 5 min Serves 1 jar = 1 serving     adjust servings

Instructions

  1. In a jar, mix all the ingredients and stir well.
  2. Cover the jar and store in the fridge overnight.
  3. In the morning, you can heat it up, or eat it cold. I eat mine cold.

If you like a smoother oatmeal, if you want your oats to have a crunch, you can use the steel cut oats. I like the steel cut oats myself. I make 5 of these at a time for easy breakfast all week. Enjoy!

  1. Had these today and will definitely have to try them again another time. I used cow milk. Afterward, I vaguely remembered instructions on making your own buttermilk involving adding lemon juice to milk and letting it sit for a while. So, um, what I had tasted funky... It was pretty okay when I got some of the date in a bite, but it was sour and full of funk if I didn't get any. There is great promise in this, however, and I'm totally on board for giving it another shot with non-dairy milk! I'm a total lemon fanatic... Thanks for the recipe! I'll keep you updated. :D
      1. Had a second go at this today, with non-dairy milk. Non-dairy is an ABSOLUTE MUST here. It was sooo good! I could definitely see having this day after day. Great texture and just the right kind of lemony. I also appreciate that there are chia seeds. I need more omega-3s in my life, and I'm too lazy to deal with fish. Thanks so much for the recipe!
