Pumpkin Pie Energy Bites (Vegan and Gluten Free)

Pumpkin Pie Energy Bites.  Time for another pumpkin recipe!  This time it’s pumpkin energy bites.  I already have a no bake pumpkin cookie recipe on my blog, but I wanted to create another one that would be great pre or post workouts.

These energy bites are packed with protein.  While these pumpkin pie energy bites are gluten free, they are not grain free.  If you wanted a grain free option for energy bites, you could probably just use nuts instead of oats.

You can make up these healthy energy bites in just a matter of minutes.  They also have no sugar added.  They are only sweetened with dates and cranberries.  I found cranberries at Natural Grocers that were sweetened with apples vs most cranberries that are sweetened with processed sugar.

I bet these energy bites would be great to put into your kiddos lunch boxes since they are nut free. 🙂

  1. I want to make these for a friend and she can't eat oats. What can I substitute? And would it be the same amount?
  2. I followed the recipe exactly, and the batter was very wet. I added an additional cup of oats and still too sticky. I used one cup of organic pumpkin, not sure if that was the issue. I got the batter to where I could roll it in sunflower seeds and put them in the oven to see if they can be salvaged into pumpkin oat bars. I was definitely disappointed because my kids loved the almond joy energy bites in their lunch boxes!
    1. Oh no! I am sorry they didn't turn out for you. :( I used organic pumpkin in my recipe as well, so I don't think that could have been the issue.
  3. Hi, Do you need to soak the chia seeds before you make this? I had a bad stomach experience with non-soaked chia seeds in the past. Thanks!
    1. You may just be sensitive to them. If they bother you, then you can pre-soak, but you may have to add extra oats to balance out the dry to liquid ratio.
