Almond Coconut Cookies

I am a big fan of almond extract.  This recipe for Almond Coconut Cookies is my latest way to enjoy the flavor of almond extract.  I could honestly smell it all day.  It reminds me of the German desserts my mom used to make when I was a kid.  These Almond Coconut Cookies contain NO flour and No oil.  Just a few simple ingredients!  If you like almond extract as well, you may also like my coconut almond fudge.

Almond Coconut Cookies

This recipe makes a small batch too.   Only about 10 cookies.  Full of almond and coconut goodness.  Vegan, gluten free and grain free.  The perfect bite when you need something sweet.  If you enjoy flourless cookies, you may also enjoy these and these.

Almond Coconut Cookies

Prep Time 5 min Cook Time 10 min Serves 10 cookies     adjust servings

Coconut almond cookies that can be made in under 20 minutes!

Instructions

  1. Preheat oven to 350.
  2. In a food processor , combine the almond butter, maple syrup, coconut, salt and almond extract. Make sure everything is mixed well.
  3. Then add the chocolate chips and pulse a few times so the chips are evenly dispersed.
  4. Using a cookie scoop , drop cookies onto a lined baking sheet .
  5. Bake for about 10 minutes.
  6. Let cookies cool completely before removing from the baking sheet . If you try to touch them while they are still warm, they will crumble.

These should last a couple weeks in the fridge. You can probably freeze them for longer. Enjoy!

  1. I love almond extract, too! I've been putting it in my coffee along with almond milk, a little coconut butter and maple syrup and it is delicious! It's one of those things that you don't need very much off or it will overpower whatever you're making, a little goes a long way. These cookies sound delicious, can't wait to try them!

    1. When you make things homemade, there are no preservatives. So they will spoil within a few days if not refrigerated. One of the things that doesn't need to be refrigerated is all my homemade granola recipes.
  3. These were yummy! My 7 year old loved them. I made mine a little smaller (like 16/batch), & calculated calories at about 125/cookie. I ran out of almond butter, so subbed about 1/3 cup with cashew butter. Next time I may use dark chocolate chips!
  4. This is my first time cooking this way. I kept putting off making the Almond Coconut cookies because I not imagine how those ingredients would taste. No sugar, no sugar? OMG ! They were delicious!!!!! I am a believer and can't wait to try more of your recipes. I've collected a few but wasn't brave enough to try them.
