Easy Lentil Loaf (Vegan and Gluten Free)

Easy Lentil Loaf.  Ever  since I made my Lentil Sloppy Joes, I have been wanting to make more recipes with lentils.  So I made this lentil loaf recipe.

I searched Pinterest and came up with this recipe.   I used that recipe as a base, but had to change out many of the ingredients to use what I had on hand.

It came out so good, that I made it a second time and made notes of all my changes.  The original recipe is very tasty, but it is a little too involved for me.

I omitted several ingredients and also some cooking steps.  I hope you enjoy my version of this Easy Lentil Loaf.  If you also enjoy lentils, you may like my Red Lentil Soup.

My husband loved this so much, that he wanted me to make it a 3rd time in a row! I ate my lentil loaf with a side of roasted veggies.  You can also serve it with a salad or just eat it as is.

Anyway is delicious.   It also freezes well.  I think you could also sneak some extra veggies in here for your kids.  Spinach or carrots might go well.  Maybe even cauliflower.

You won't miss the meat with this delicious lentil loaf!

Ingredients

For the glaze

  • 1/4 cup ketchup
  • 2 tsp Worcestershire sauce

Instructions

  1. In a large saute pan , combine the lentils, vegetable broth, water and steel cut oats.
  2. Bring to a boil, turn down and simmer for about 15 minutes, or until most of the liquid is absorbed.
  3. Preheat oven to 375.
  4. Once the steel cut oats and lentils look cooked, add in the remaining ingredients and stir well.
  5. Transfer the mixture to an 8x8 glass baking dish . Cover and bake in the oven for about 25 minutes.
  6. Remove the cover, brush on the glaze and bake for another 7 minutes.
  7. Serve immediately or refrigerate for later.

    1. Worcester sauce in the uk is not veggy or vegan as it contains fish, but hendersons relish is a good alternative, also coconut aminos is very hard to find so would probably need to be substituted

  3. This was delicious! I'm the only one who's had it so far - kids had leftover chicken but it's on hubby's plate waiting for him to get home. I did the cauliflower popcorn too - awesome! Kids won't eat that - yet, I'm going to work on them :) At least they had some veggie in their macaroni - pureed sweet potato and two out of 3 eat steamed broccoli. Let's see, in addition to this and the cauliflower, in the last week I have made: avocado chocolate chip cookies, fish crackers, wheat thins (today!), baked pumpkin and almond butter oatmeal, flourless brownie bites, pecan pie granola and blueberry crumb bars (with triple the amount of filling. I did not have jam so cooked some apples and blueberries - made a little too much! As it's not too sweet, hubby loves it). Big thanks!

My husband and daughter have been resistant to the new vegetarian recipes I've been making, and they love their traditional turkey meatloaf. Happily, the whole family enjoyed this lentil loaf. (I skipped the glaze because it was sweet enough without, and used Parmesan cheese in place of nutritional yeast because I haven't been able to find it at the store yet.) Yummy, thank you!
  5. I was not initially a believer in this lentil loaf. As I was tasting it along the way, it tasted sooo OATY. Like some weird ketchup flavored savory oatmeal. But after it was done, and the glaze was on, it was AMAZING. The leftovers were even better--the texture and flavor was even yummier. And this was sooo easy and fast. A new staple for sure.
