These healthy cookies are so good and very easy.  From start to finish it’s less than 20 minutes.  No mixer needed!  I think the sweet and salty combo is what make these out of this world delicious.

These peanut butter cookies are vegan, gluten free and grain free.  If you wanted a paleo version, you can use almond butter.  If you needed a nut free version, try using sunflower butter.  I think either will work out.

Some great add ins for this recipe would be:

  • chocolate chips

    1. Are you asking if plain butter can work in place of peanut butter? If that is the case, then no, but any sweet syrup should work.
    2. Butter flavored syrup is NOT maple syrup. Maple syrup comes entirely from a maple tree, butter flavored maple flavored syrup is made of white sugar and corn syrup. While it might work it sure takes away from the simplicity and health factor of these babies
  1. How many cookies should this make? My 2 and 4 year old helped me and they ate half the batter before it got in the oven :)
  2. Hmy mix didn't look like yours nit was too runny. I think it was the peanut butter. I used all natural no sugar, no salt pb. It was quite oily. Can I ask which brand you used?
    1. I use all natural peanut butter too. Only ingredient is peanuts. If you blend for a minute, the mixture will go from runny to thick. Did you blend long enough? If I don't make my own peanut butter, I use the natural brand from Costco or Sprouts.
      1. Melissa, My batter is crumbly? Added all ingredients...my PB was room temp so I thought maybe too hot? I have had it in refrig for 30 min but still no change. Any suggestions?
        1. Maybe it got too hot. :( Sorry that happened. You can try adding a little more maple syrup to see if that helps.
  3. My cookies fell apart. Thinking that maybe I didn't mix the PB enough before using it. Any thoughts or experience with this? They taste good but do not stay together. I might have to get ice cream to sprinkle the cookie crumbs on. Haha
