Flourless Lemon Cookies

I am a lover of all things lemon. How about you?  I have had it on my mind to make these Flourless Lemon Cookies for a while now.  I am so glad I did.  They are super easy and didn’t even last a day at our house!

All you need is 4 simple ingredients and less than 20 minutes!  If you like flourless recipes, you may also like my Super Moist Flourless Brownies or my Flourless Salted Caramel Chocolate Chip Cookies.

Not only are these healthy cookies flourless, but they also contain no refined sugar. These cookies are vegan, gluten free and even paleo approved. I hope you enjoy them as much as I do!  If you need a nut free version, you can try using sunflower butter.

Flourless Lemon Cookies

Flourless Lemon Cookies

Prep Time 5 min Cook Time 12 min Serves 10-12 cookies     adjust servings

Only 4 simple ingredients to make these flourless cookies with zero refined sugar!

Ingredients

  • 1 heaping cup cashew butter (I made my own, but store bought works too)
  • 1/4 cup maple syrup
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • pinch sea salt (optional)

Instructions

  1. Preheat oven to 350.
  2. In a food processor , combine all the ingredients until smooth. If the batter seems too runny, just stick it in the fridge for a minute.
  3. Use a cookie scoop to form cookies and drop onto a lined baking sheet .
  4. Bake for 12 minutes.
  5. Let these cool completely before removing them from the baking sheet.
  6. Store in an airtight container.
  7. They should last a few weeks in the fridge.
  8. You can also freeze them for up to 6 months. Enjoy!

  1. I would love to know if this could have a substitution to something other than cashew butter, my family is allergic to cashews.
      1. I am allergic to cashews too. I was thinking of using almond butter. I can't find macadamia nut butter. Do you think that would work? Also, on your other recipes that call for cashews (i.e. Larabars), would you suggest walnuts as a good alternative? Thanks!
        1. Yes almond butter will work for this I think. And yes, you can use any other nut you like for the larabars :)
    1. How did they turn out with the almond butter? I was thinking of substituting that too. (It's what I have on hand and I really want to make these asap - they look so good!)
      1. I did make them with almond butter and honey, and they were pretty darn good. I just bought some cashew butter and maple syrup though, and I am looking forward to making them the right way and tasting the difference.
  2. Any ideas for subbing out the maple syrup? I need to be sugar free.... :( Would stevia work? and then what would you suggest for more liquid? Thanks....
    1. Walden Farms Pancake Syrup is 0 calories, no sugar but still has maple flavor. It could work. Otherwise, if you add stevia or monk fruit or whatever, you may want to add some maple extract, too.

  5. Can you do these without a food processor or is it really necessary to combine the ingredients? I have a hand blender, a blender, a mixer but no food processor.

    1. I love dates and have many recipes that call for them! :) I am currently chilling a new recipe right now that is sweetened with dates. I think date syrup could work fine in this
  7. LOVE lemon but not cashews/cashew butter - is there a noticeable cashew taste to the cookies or predominantly lemon ?

  9. I love these cookies!! They are not grainy in texture like cookies made with almond flour. As usual when I make your cookies, they do not get a chance to cool completely before several end up being eaten by my teenage son. Thank you so much for all you do to develop and share recipes for those of us who are not that creative in the kitchen but want healthy snacks!
