Flourless Lemon Cookies

I am a lover of all things lemon. How about you?  I have had it on my mind to make these Flourless Lemon Cookies for a while now.  I am so glad I did.  They are super easy and didn’t even last a day at our house!

All you need is 4 simple ingredients and less than 20 minutes!  If you like flourless recipes, you may also like my Super Moist Flourless Brownies or my Flourless Salted Caramel Chocolate Chip Cookies.

Not only are these healthy cookies flourless, but they also contain no refined sugar. These cookies are vegan, gluten free and even paleo approved. I hope you enjoy them as much as I do!  If you need a nut free version, you can try using sunflower butter.

Flourless Lemon Cookies

Flourless Lemon Cookies

Prep Time 5 min Cook Time 12 min Serves 10-12 cookies     adjust servings

Only 4 simple ingredients to make these flourless cookies with zero refined sugar!

Ingredients

  • 1 heaping cup cashew butter (I made my own, but store bought works too)
  • 1/4 cup maple syrup
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • pinch sea salt (optional)

Instructions

  1. Preheat oven to 350.
  2. In a food processor , combine all the ingredients until smooth. If the batter seems too runny, just stick it in the fridge for a minute.
  3. Use a cookie scoop to form cookies and drop onto a lined baking sheet .
  4. Bake for 12 minutes.
  5. Let these cool completely before removing them from the baking sheet.
  6. Store in an airtight container.
  7. They should last a few weeks in the fridge.
  8. You can also freeze them for up to 6 months. Enjoy!

  1. hi melissa, i have yet to make anything on your website, but am a regular reader of it. everything looks wonderful! i have never purchased cashew butter - for this recipe, should i be looking for one that is no-salt added and sugar-free? thanks!
    1. Hi Angela. I make my own cashew butter. It only takes about 7 minutes in a food processor. If you want to buy it, just look for a brand with no added sugars or oils.
  2. I'm making these right now and maybe it's because I bought my organic cashew butter instead of making it from scratch but these cookies look nothing like yours...

  4. I don't have any cashew butter in the house, but would like to try these. Would peanut butter work instead of the cashew butter?
    1. They might be able to be done in a Vitamix. Or you have mix everything in a saucepan, let cool, and form into cookies.

  7. I made these last night. I needed to put the dough into the refrigerator for quite a while. I tried with 3 on the sheet first and the bottom burned. I then tried it with the convection option and they turned out much better. My husband really likes them. Thanks for another good recipe, Melissa.

    1. Sorry that happened. :( Did you let them cool completely before removing from the baking sheet? They will crumble if still warm.
