Flourless Snickerdoodles that are vegan, gluten free and paleo approved! This recipe is super simple to make and it only calls for a few ingredients.
I used cashew butter for my recipe, but you can use any nut butter you like. If you need to make it nut free, you can use sunflower seed butter.

Flourless Snickerdoodles
Flourless Snickerdoodles (Vegan, Gluten Free, Paleo)
Ingredients
- 7-8 Medjool dates (soaked for 30 minutes)
- 1 cup cashew butter
- 1 tsp cinnamon
- 1 T cinnamon sugar (optional)
Instructions
Preheat oven to 350.
Drain the dates.
Add them to a blender and blend into a date paste.
In a food processor, add all the ingredients, except the cinnamon sugar.
Once mixed, use a cookie scoop to drop cookies on a lined baking sheet.
Sprinkle the top with cinnamon sugar if desired.
Bake for about 10-12 minutes.
Let cookies cool completely before removing them from the baking sheet.
Store in an airtight container for up to 2 weeks in the fridge. Enjoy!
