Sweet Potatoes Lentils Sage (Vegan, Gluten Free)

Sweet Potatoes Lentils Sage makes the perfect combo.  This hearty fall dish is quick to make and budget friendly.

 

Sweet Potatoes Lentils Sage

 

We are still in the process of cooking out of our pantry and I had a lot of green lentils to use up.  Since I have a delicious soup on my blog with sweet potatoes and green lentils, I knew these flavors would go great in a skillet dish too.

 

 

We kept it simple for this recipe with a very small ingredient list.  However, I think adding some spinach would have went great as well.  This healthy dish is vegan and gluten free.

Sweet Potatoes Lentils Sage

Sweet Potatoes Lentils Sage

Prep Time 10 min Cook Time 15 Serves 4-5 servings     adjust servings

Ingredients

  • 2 medium sized sweet potatoes, cut in small cubes
  • 1 small onion, diced
  • 1 T avocado oil
  • 3-4 cloves garlic, minced
  • 2 cups cooked green lentils
  • 1 tsp sage
  • sea salt to taste

Instructions

In a large saute pan, on medium heat, cook the oil, onions and garlic until translucent.

Then add the sweet potatoes and a tiny bit of water to the saute pan. Cover and let cook for about 7-10 minutes, or until the sweet potatoes are soft.

Lastly, add the sage, sea salt and cooked lentils and stir to combine.  Cook for 1 more minute.  Enjoy!

  1. Hi! What's your suggestions on cooking lentils? I've seen lots of places where they say you need to leave them in water for hours and others where they just tell you to use them dry directly to the pan.
    1. Hi Ana! I cook them like rice. 1 part lentis, 2 parts water. Bring to a boil, then cover, turn down and simmer until all the water is absorbed,
  2. Sage is the Perfect edition to these flavours, I sort of make this recipe into more of a casserole by blending/ mashing the sweet potatoes and baking them on top! Such a wonderful recipe, kids loved it
