It’s Emily from PrettyPies.com here to share another secretly healthy whole-foods dessert recipe: Frozen Mojito Pie! The classic cocktail translated into PIE form!
Have you ever had a mojito? I had my very first one a couple of months ago while I was on vacation at the beach and I’ve been dreaming of it ever since. It combines lime and mint, which is so incredibly refreshing.
I was skeptical of the flavor– until I tried it! It turned out to be my favorite drink. One that I ordered again and again. I couldn’t get enough lime + mint deliciousness. And the FROZEN version elevated it to another level! Perfectly frosty and creamy, with just the right balance of tart and sweet. So yummy! And that’s JUST what this frozen pie tastes like.
This pie is made with SIX ingredients, plus a dash of salt and water. Just nuts, dates, mint, lime, maple syrup and AVOCADO! Simple creamy, good-for-you ingredients. Full of vitamins, minerals, antioxidants, and FIBER. Tastes good, but also makes you FEEL GOOD. That’s the best part!
Avocado-based desserts are a perfect way to enjoy a rich tasting dessert, without adding any oil or butter! If you haven’t tried one before, now’s the time!! And, no, they don’t taste like avocado, and they DON’T turn brown! The lime juice naturally keeps the pie a beautiful green color, and gives it a bright zesty flavor. Just be sure to use avocados that are just ripe– not under or over. (Over-ripe can have a slightly different taste). Who would have thought that frozen avocado would taste so AMAZING?? Haha! Not me! But now I’m a believer!

Frozen Mojito Pie
A healthier take on the classic frozen drink, made with just 6 simple ingredients and no oil!
Ingredients
Crust
- 2 cups almonds
- 1 1/4 cup pitted dates
- Pinch of sea salt
- Splash of water to help blend, if needed
Filling
- 3 avocados (not over-ripe)
- 1/2 cup maple syrup , to taste
- 1/3 cup lime juice
- 1/4 cup mint leaves, to taste
- Extra lime slices, zest and mint for garnishing (optional)
- Whipped coconut cream, (optional), for serving (see notes)
Instructions
- To make the crust:
- Pulse ingredients together in a food processor until a dough of sticky crumbles forms. Add a splash of water to help it come together.
- Press into a standard size pie plate .
- To make the filling:
- Add avocados to food processor and blend smooth.
- Add in remaining ingredients, to taste and blend again. (Add some zest for extra zing, if that’s your thing!)
- Pour over crust and set in the freezer for about 4 hours, until solid.
- Thaw on the counter to desired texture. (See notes)
- Garnish however you like, slice and serve immediately. Enjoy!
Recipe Notes
Fresh mint leaves can be found in the refrigerated produce section of most large grocery stores. I got mine at Sprouts. I haven’t tried mint extract, but it might work in a pinch. I would start with 1/8 tsp mint (not peppermint), and then add ONE drop very carefully, to taste.
Keep pie frozen. Thaw at room temp to desired consistency to serve (about 30-45 minutes, usually). Can be served slightly frozen for a pie that taste like a frozen mixed drink, or completely thawed for a cream pie taste, depending on the texture you like. I liked both!
To make the whipped coconut cream, I used 1 can of coconut milk, refrigerated overnight (the solid cream only), whipped with 1 Tbs maple syrup and 1 tsp vanilla. Place in a baggie to pipe on swirls.
