These seriously whip up in just a few minutes.  This recipe is vegan, gluten free, dairy free and nut free.  I added chocolate chips to mine, but you could also add raisins if you prefer.  This is a great way to use up some ripe bananas too.

Personalized Baked Oatmeal

In my family, we all have different tastes or dietary restrictions.  So this Personalized Baked Oatmeal is a win win for everyone!  This personalized baked oatmeal is not my idea though.  It comes from Brenda Bennet’s new cookbook, Sugar-free Mom: Naturally Sweet and Sugar-free Recipes for the Whole Family.  You may already know Brenda through her blog, Sugar Free Mom.  I had the pleasure of reviewing the book.   My whole family loved this baked oatmeal.  It’s super easy to make too!

Another thing that makes baked oatmeal so great is that it can be made ahead of time.  I usually make a double batch and stick one batch in the freezer.  That way, if I am feeling lazy one morning, I have a healthy breakfast option to pull out of the freezer. Just reheat and you are good to go!

I must admit, I am not a fan of carrot cake anything.  My husband is a huge fan of anything carrot cake, so he tasted tested these and gave his approval!  It took me two tries to get this recipe perfect.  I hope you enjoy it.

Gingerbread Baked Oatmeal. Now that Thanksgiving is officially over, I feel it’s time to spread the gingerbread love with some more vegan gingerbread recipes!

Currently, I have a Gingerbread Overnight Oats recipe as well as a No Bake Gingerbread Cookie recipe, so this gingerbread recipe fits in nice.

Baked oatmeal is so great.  It’s the oatmeal you can take on the go.  This is a very easy gingerbread recipe that takes very little time to make.

These are freezable as well, so feel free to double the batch and freeze some.  That way they can be for those mornings when you need a quick breakfast on the go.

Prep Time 10 min Cook Time 15 min

Ingredients

Instructions

  1. Preheat the oven to 350. 
  2. Mix all the dry ingredients in one bowl .  Mix wet in another.  Add wet to dry and mix well. 
  3. Spoon batter into lined muffin pans and press down well with the back of a spoon.
  4. Bake in the oven for 15-17 minutes. 
  5. Wait until they are completely cooled before removing them from the pans.

I used jumbo muffin pans and got only 4. You can probably get double the amount using standard sized muffin pans .

These should last a week in the fridge and longer in the freezer. And don’t forget, you can use gluten-free oats to make them gluten-free. Enjoy!

Pumpkin Pie Baked Oatmeal (Vegan and Gluten Free)

Pumpkin Pie Baked Oatmeal.  I love oats for breakfast.  They fill me up and give me lots of energy.

I often make my overnight oats in a jar.  This baked oatmeal is another way to eat your oats on the go.  If you like my pumpkin pie overnight oats, you will love this recipe!

This pumpkin baked oatmeal recipe can be made in just about 30 minutes.  Very easy and you may already have most of the ingredients!  It’s like a bowl of oats in muffin form.

Great for on the go.  You can make a big batch and freeze some for easy breakfast options on those busy days.

Almond Butter Chocolate Chip Baked Oatmeal

Almond Butter Chocolate Chip Baked Oatmeal.  I made you some baked oatmeal!  I just love oats.  They are much more satisfying than a bowl of cold cereal.

Since this healthy baked oatmeal recipe is very high in fiber, it will keep you full for a long time afterward.  Lately, I have been doing a few baked oatmeal dishes which have become my new favorite way to eat oats.

First, I did the Apple Cinnamon Baked Oatmeal.  Then the Strawberry Banana Baked Oatmeal.  Now this latest recipe.

 

Almond Butter Chocolate Chip Baked Oatmeal

 

This is my new favorite, because, let’s face it, almond butter makes everything better!  Throw in some chocolate chips and you have yourself a pretty heavenly little breakfast.

High protein too.  These would be especially decadent if you topped them with my Sweet Peanut Butter Spread.

Almond Butter Chocolate Chip Baked Oatmeal

Almond Butter Chocolate Chip Baked Oatmeal

Prep Time 10 min Cook Time 15 min Serves 6 muffins     adjust servings

Ingredients

  • 2 cups gluten free rolled oats
  • 1/3 cup almond butter
  • 2 ripe bananas smashed (you can also use 1/2 cup applesauce or plain yogurt)
  • 3 T maple syrup
  • 1 tsp vanilla extract
  • 2-3 T almond milk
  • 1/4 cup vegan chocolate chips

Instructions

  1. Preheat oven to 350F
  2. Mix all the dry ingredients in one bowl.
  3. Mix wet into another.
  4. Add wet to dry and mix well.
  5. Grease a muffin tin and spoon batter into each cup until it is about 3/4 full.
  6. Bake in the oven for 15-18 minutes.

I used a jumbo muffin pan and got three of them out of this batch. If you use regular size muffin cups, you will probably get about 6.
